Only eat scallops that smell like the freshness of the ocean.Some scallops from different parts of the ocean have a stronger flavor.Soak the scallops in cold milk in your frig for a few hours. Drain and pat dry with a paper towels and cook them the way you like BUT never over cook them !!

Well, once it is done, you can't remove the taste.
But for next time..... the bitter you are tasting is burnt butter. The milk solids in the butter have browned then burnt. So next time, use butter AND some olive or canola oil. The oil wll allow the butter to take a higher temp. w/o scorching.
OR
Clarify butter. Melt a couple sticks in the microwave in a tall cup. Let settle. The fat will rise, the milk solids will settle to the bottom. Carefully pour off the fat and use that to sear your scallops in. This calrified butter is also known as "ghee" in Indian cooking, and is what is used to dip lobster tails in.

I don't know how to remove the bitter taste I've never made them before but if you go to allrecipes.com and type in scallops they have GREAT recipes and they're all rated so you can see what other people think of them too. I love this site and it may give you some great new ways to cook them. Good luck sorry I couldn't help more!

Scallops should taste sweet and fresh like the ocean...if they're bitter they're bad. Garbage disposal!

I would first boil them for 4-5 minutes in water with a couple tablespoons of sugar, until they are more white than transparent. Then, sautee them in the pan briefly with the butter...this way they will not be cooked too tough in the pan, but will retain the buttery flavor. douse them with a good spray of lemon juice following the butter cooking...this should cut that bitterness. ideally, they ARE sweet, but there is no guarantee. hope they turn out for you!!

You probably don't live by the ocean. The bitter taste is because they are old and not fresh.
