Not canned. They are tasteless and watery. Except for pineapples and may be strawberries too. Drain well.
As for sweetness, try them out. Are you planning to put them on the cake too? Deco? Fresh is always good. Keep it at home on the shelf for a day if they are not ripe.
If you chose nice red ones, they are good and ripe too.

With fresh fruit coat it in a light syrup or icing sugar. Canned and fresh are both good choices. ( I prefer fresh for inside the cake and canned as a topping because canned doesn't need any more preparing ). For another choice dip use fresh but thinly slice them and coat them in bakers chocolate.

Fresh fruit is by far healthier . . . but maybe on a cake that is not your main concern!! You could always try sweeter fruits like fresh raspberries or bananas.
