if you had a lot of dogs coming i would have said musical chairs dog style. You get hula hoops and put them in a line on the gound and each handle walks their dog at their sit and whoever ends up at the end handler with dog sitting in the last hoop wins. SInce you just have one dog coming why don't you just have activies the dog likes, (like a pool of water or a sandbox, rent a tennis ball launcher for a lab, ect) and do other things for the people.

Have the dogs compete in an Olympics, doggy-style, i.e. who can roll over fastest, agility course, etc. Make sure you make a cake out of wet dog food!
