Crispy Chicken Burritos:

25 min 10 min prep
4-6 servings
10-15 burritos

2 lbs diced cooked chicken
2 (8 ounce) packages cream cheese, softened to room temp
1 teaspoon garlic powder
1 teaspoon seasoning salt
onion powder (to taste)
1/8 cup favorite salsa
10-15 burrito-size flour tortillas
flour, plus
water, mixed to a paste to seal burritos

1. Mix first 6 ingredients well & set aside. Mix flour & water until it is pasty but not dry. Put about 1/3 cup chichen mix into each tortilla roll tightly, Put paste on the bottom flap of tortilla and place flap side down for about 10 min so it will stay sealed. I like to cut them in half & fry at 350 until golden brown.
2. These are good with salsa or sweet & sour sauce.

Spicy Shredded Beef Burritos

Yield: 10-12 servings

Ingredients:

4-1/2 pound bone-in chuck roast
7 ounce can diced green chiles
3 tablespoons chili powder
1 teaspoon oregano
4 cloves garlic, minced
8 ounce can tomatoes
Salt and cayenne pepper to taste

Procedure:

Place chuck roast on a sheet of aluminum foil, approximately 12 inches x 25 inches. Mix together green chilies, chili powder, oregano and minced garlic.

Spread this mixture on the roast and seal the foil all around.

Place in a roaster and bake at 300 degrees F. for 4 to 4-1/2 hours. The roast should be very tender and fall apart. Discard the bone and fat.

Transfer the drippings to a large pan and stir in the canned tomatoes and shredded beef.

Mix well and heat through. Add salt and cayenne pepper to taste.

Serve on flour tortillas topped with your choice of condiments, including tomatoes, cheese, lettuce, sour cream, guacamole, etc.
