Delete the oregano, parsley and garlic and just use a dried Italian seasoning (about 2 tsp.) to make this easier. It is also low-fat
This makes about 20 so increase amounts as you need –
3/4 pound extra-lean ground beef
1/3 cup breadcrumbs (about 1 slice)
1 tsp dried oregano
1/2 cup finely chopped onion
1/4 cup canned no-salt-added tomato sauce
1 garlic clove, crushed
1/4 cup fresh parsley, finely chopped
Preheat oven to 400 degrees, and spray a cookie sheet with nonstick cooking spray. Crumble ground beef into a large mixing bowl. Add breadcrumbs, oregano, onion, tomato sauce, garlic and parsley. Combine ingredients thoroughly, either with fingers or with a fork.
Roll meatball mixture into 1-inch balls and place on cookie sheet.
You should have about 20 meatballs. Bake in the oven for 16-18 minutes, turning once in the middle of cooking.
Cook spaghetti in a large pot according to package directions, without added salt or oil.
In a large pan, heat your purchased marinara sauce; add cooked meatballs to the sauce and simmer until the pasta is ready.

This is what I use; it's pretty simple. For 1 lb of beef, I add about 1/4 cup of breadcrumbs (I get them from the supermarket; easier than making them, but you could make them in a food processor if you want) Add 1/4 tsp. pepper, 1/2 tsp. salt Mix thoroughly. Roll into meatballs and bake about 20 minutes at 350. Cut one in half at that point and check if it's still pink inside, bake a litttle longer. You can also cook then a little longer in the sauce if you need to. That's pretty easy.

For 75 or so???? so thats what, 225 meatballs required? the simplest way maybe to get about 28-30 pounds of burger and pick up one of those meatball amkers in the kitchen gadgets aisle, then just scoop and go. I agree adding spices, herbs, eggs and bread crumbs would improve the quility of the meatball but you have an awlful lot to do!

My "simple" meatball is a combination of:
Italian Breadcrumbs or regular breadcrumbs
2 eggs per 1 lb. of beef
...and beef.
I keep adding breadcrumbs until the beef gets good texture and stays together well.
If you want to get a little fancy without spending a bunch of money, throw in some veal, buffalo, or beef sausage with the meat.

chop the onion the garlic mix them with the beef the oregano the Parmesan and the mashed potato(probably 2 cup is ok)add the eggs salt pepper and roll the ball in brad crumb.Bake and then add to the sauce.(the mashed potato are for making the ball soft and juice

just add your favorite italian seasonings and maybe an egg or two to help them stay together. roll into balls and bake. their is no easy recipe. meatballs are easy to make. it is however you would like for them to tatste. keep in mind when seasoning them, that the sauce already seasoned.
