COUNTRY STYLE SQUIRREL

2 squirrels
Flour
Salt and pepper
1 c. water
Shortening

Cut squirrels into serving pieces as you would chicken, wash, pat dry. Roll in flour, salt and pepper. Fry in skillet until golden brown, drain off most of grease and add water. Bring this to a boil; cover and cook over low heat about 1 hour. Turn the squirrel occasionally and baste often.

Fried Squirrel
Sprinkle quail, dove or squirrel pieces liberally with seasoned salt. Soak overnight in a mixture of 1 egg beaten with 1/2 cup milk. Drain, dip in pancake flour and fry in deep fat (375 degrees) for about 10 minutes.

To fry it just cut it up and wash it.Then drag it thru some seasoned flour.Then fry.Fry it on low and use the smother fried method.Cover the squirrel and cook slowly.Only turn it once.Then you can throw some onions and garlic in the pot and make a killer gravy with the drippings.Squirrel is good and tender but it takes mess of them to feed a family.Is hunting season still on where you are?Be careful.

The darned squirrel always wiggles and shakes the milk and batter off, so I've usually had a heck of a time getting it coated. If you put it in the fridge, it won't move as much, so it's easier to handle. But you have to put it in a container otherwise it'll eat your other food items before it gets too cold to move.

i've ate alot of squirrel. just fry it like you would a chicken.
