My boyfriend and I are in a somewhat of a long distance relationship because of college, and I would like to cook a nice romantic dinner for the both of us when he drives up to see me in a few weekends. I was thinking somewhere along the lines of a chicken dish with a lite sauce or something like that and would like to know what wines I could possibly choose. Don't worry, we are both of age to drink (I'm 21 and he's 22).

If you have ANY suggestions for the chicken dish, sides, dessert, or wine go ahead and post it. I'm not really set on anything except for the chicken. I'd be willing to try most suggestions, but please be simple and cheap. I am a college student with a small kitchen, limited cooking experience (although the majority of what I cook tastes pretty darn good according not only to myself but also to others and comes out looking nice), and don't have much of a budget, but still want to do something nice.

If possible please include ingredients and/or cooking instruction.

Chicken in Champagne Sauce

4 boneless chicken breasts
1 tsp thyme
1 tsp seasoned salt (Lawry’s)
1 tsp garlic salt or powder
6 tbs light margarine or butter
2/3 cup Asti Spumante or any sweet wine (use the cheapest you can find)
2 tsp flour (more if needed to thicken)
1 cup half and half or lowfat milk

Sprinkle chicken breasts with all seasonings. Heat butter in frying pan. Brown chicken. Add Asti or wine. Cover pan and simmer about 30- 40 minutes, turning twice, until chicken is tender. Remove chicken and keep warm. Thicken sauce with flour. Stir in half and half and heat sauce. Add chicken to sauce to coat. Makes 4 servings

Serving suggestions: Serve with boiled red potatoes or mashed potatoes with sauce on top and steamed broccoli.




Hot Fudge Pudding Cake

During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.

1 cup Bisquick
1 cup sugar
3 tablspoons plus 1/3 cup of unsweetened cocoa powder
1/2 cup milk
1 tp vanilla
1 2/3 cup hot water
Powdered sugar (optional)

Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.

general rule of thumb with wine...white with light foods and red with darker foods.

if you want something romantic however, look into or consider shellfish (oysters or scallops specifically) b/c they are aphrodesiacs and will help get you both in the mood. scallops can be bought for pretty cheap if they're frozen and will still be pretty tasty. even if you just had a few for an appetizer, it would be nice.

for chicken, i'd go with a pinot grigio or a chardonnay depending on what you both like. grigio is lighter flavored than chardonnay so if you're not big wine drinkers then i'd go with a pinot grigio. let me look thru my "bag of tricks" from culinary school on food/wine pairings and email me in the morning if you're still interested.

cooked ham 4 slice
4slice of cheese(any that you like)
1 can of broth (chicken)
black olives 1 can already chopped(make your life easy)
6 tablespoon of Fleur
3 tablespoon oil
2 table spoon
1 tea spoon oregano
salt and pepper to taste


pound the chicken breast put them in the flour both side.
in a pan oil butter and then add the chicken.2 minutes add the broth bring to boil then turn the breast on the other side, add the oregano the olive and cook them for about 15 minutes. remove from the stove top the breast with the slice of ham the cheese cover and on the stove for other 5 minutes. serve with boiled rice or salad or simple asparagus saute in a pan with butter.

easy chicken recipes with few ingredients and little prep time:
chicken marsala or chicken francaise
i would serve a nice white wine..pinot grigio

Pecan Chicken with Dijon Sauce

Ingredients:

4 boneless chicken breasts
1-1/2 sticks of butter
4 tbsp. Dijon mustard
6 ounce of pecans, finely ground
2 tbsp. canola oil
2/3 cup sour cream
1 tsp. salt
Pepper to taste

Procedure:

Place chicken between 2 pieces of waxed paper and pound gently until about 1/4 inch thick.

In a microwavable bowl, melt 1 stick of butter and 3 tbsp. of the mustard until just melted. Whisk to incorporate. Place the pecans on a dinner plate. One by one dip the pounded chicken breasts into the butter/mustard sauce then into the pecans, coating thoroughly.

Melt the half stick of butter in a skillet, add the oil and heat to medium. Saute the chicken for a few minutes on each side to brown and transfer to a casserole dish. Place in a medium oven (300 degrees) for about 6 more minutes.

Drain the pan of oil and deglaze with the sour cream, stirring with a whisk over medium heat. Add the remaining tbsp. of mustard and season with salt and pepper. Place a pool of the sauce on each of four plates and place the cooked chicken on top.


Pan Roasted Potatoes

2 large Idaho Russet potatoes, peeled and thinly sliced
1/2 stick unsalted butter
Salt and Pepper
1/4 cup freshly grated Parmesan Cheese
2 tbs. Chives, chopped
1 tbsp. parsley, chopped

Procedure:

Preheat your oven to 450 degrees.

You’ll need a 9-inch cast iron pan or saute pan that has an ovenproof handle. Melt 1 tbsp. of the butter in the pan. Remove from stove. Line the bottom of the pan with sliced potatoes, slightly overlapping them.

Melt the remaining butter in your microwave. Lightly season the potatoes with salt and pepper, then a sprinkle of Parmesan, chives and parsley. Drizzle with a touch of the melted butter and repeat these steps until you’ve used up your potatoes, about five layers.

Cover the skillet with foil and place in your oven for 25 minutes. Remove foil and continue cooking for about 25-30 more minutes. Test for tenderness with a fork and remove from oven if done.

To serve, place a dish over the pan and invert the pan. You’ll have a beautifully browned mound of yummy potatoes. Garnish with a little fresh chopped parsley and serve.


Swiss Cheese and Corn Casserole

Ingredients:

3 cups corn
1 cup water
1/2 teaspoon salt
1 can (6 ounce) evaporated milk
1 egg, lightly beaten
2 tablespoons finely chopped onion
salt and pepper to taste
1 cup shredded Swiss cheese, divided
1/2 cup soft bread crumbs
1 tablespoon melted butter

Preparation:

In a saucepan, combine corn, water and salt. Bring to a boil and cook corn for 3 minutes, drain well.

In a bowl, combine corn with evaporated milk, egg, onion, salt and pepper and 3/4 cup of the Swiss cheese. Place mixture in a 10x6 baking dish.

Toss bread crumbs with butter and remaining Swiss cheese. Sprinkle crumb mixture over top of corn mixture. Bake for 30 minutes in a 350 degree oven.



Tiramisu

Traditional coffee and mascarpone spoon dessert

Serves 8-10

Ingredients:
5 cups strong cold espresso coffee
32 Savoiardi (Italian ladyfingers)
5 egg yolks
10 tablespoons sugar
1 pound mascarpone cheese
1-2 tablespoons Marsala wine
2 cups heavy cream
3 tablespoons unsweetened cocoa powder

Directions:

Pour the cold coffee into a large pie plate, dip sixteen of the ladyfingers very quickly into the coffee, and line the bottom of a 12 x 9 x 2 inch oval dish with ladyfingers.

In a large mixing bowl, whisk the egg yolks and sugar until frothy; add the mascarpone and Marsala, and blend until smooth.

In another bowl, whisk the cream until stiff and fold into mascarpone mixture until well blended and smooth. Using a large pastry bag, pipe about half of the mixture over the ladyfingers. Dip the remaining ladyfingers quickly into the coffee, arrange another layer of ladyfingers over the cheese mixture, and pipe the remaining mixture over the ladyfingers in an attractive design. Cover with plastic wrap and chill at least 6 hours.

When ready to serve, sprinkle the cocoa powder through a fine sieve over the entire surface of the tiramisu. Spoon portions onto individual dessert plates.
