I am running out of ideas. I need a good, easy to make, healthy and afforadable meal to cook. Any ideas?

chicken enchiladas! we always eat mexican food on thursday nites (when they dont go visit their dad). we watch ugly betty and eat chalupas, tacos, or enchiladas. today i'm making sour cream enchiladas!
cook chicken breast in your fave mexican seasonings. then i shred it in a bowl. let cool. then heat tortillas in a microwave to "soften". dont let them get rubbery. then roll each tortilla with monterrey jack cheese, and spicy shredded chicken. place them in a backing dish that has been "greased" with sour cream. then top with the remaining sour cream. bake for 360/ 30 min. before you take out, sprinkle a bit of cheese for last 10 min. it is yummy and healthy. i always use fat free sour cream and corn tortillas are far less fattening than flour!

Crockpot Chicken Stroganoff

Ingredients

(4 servings)

6 Boneless Chicken Breasts
16 oz Sour cream
1 cn Cream of Mushroom soup
1 pk Onion Soup mix, Lipton's


Instructions

Mix all together and put into crockpot. Cook on low for 4 -6 hours. Or until chicken is tender. Serve over cooked noodles or rice.

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

This one is 1 of my favs and it's very easy and affordable and different;

Chicken in Pesto Sauce
Serves 4 Ingredients

1 pound skinless, boneless chicken breasts, cut into 3/4-inch strips
1 tablespoon vegetable oil
2 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 can (14.5 oz) College Inn® Chicken Broth (99% Fat Free)
1/2 cup milk
1/4 cup prepared pesto sauce
1 teaspoon lemon juice
1/4 teaspoon pepper
Hot cooked angel hair pasta
Grated Parmesan cheese


Directions: In large skillet, cook chicken in oil until browned and cooked, about 4 minutes, then remove. In same skillet, melt butter; stir in flour and cook until bubbly. Add broth and milk; cook, stirring constantly until mixture thickens. Stir in pesto, lemon juice and pepper. Return chicken to skillet; heat. Serve over pasta. Sprinkle with cheese.

Something really good is get some angel hair pasta, a jar of alfredo sauce (I buy mushroom alfredo) and a thing of fresh mushrooms saute the mushrooms in a little olive oil, and garlic butter. (if you have chicken breast or shrimp on hand add that too). When that sauted (done) add the jar of sauce and a small can of evaporated milk, and lots of pepper and some salt. It's really tasty alone or jazz it up with bread and a salad.

Ok....here's what you'll need! Salmon.....red bell peppers....fresh garlic....butter...parsley....lemon....and of course salt and pepper!

1. preheat oven to about 375 degrees.
2. line a baking dish with foil and rub butter on the foil...
3. cut your lemon into thin circular slices....(depending on how many pieces of salmon you use....that's how many circles you want!) place the lemon on the foil and place the salmon directly ontop of the lemon. Squeeze a little lemon juice on top of the fish as well!
4. mince the garlic, and dice the red bell pepper....and pour them ontop of the salmon.
5. place small sprigs of parsley between the pieces of salmon....and finally add the salt and pepper!
6. Wrap the salmon and place it in the oven for about 40-45 minutes....but check on it continuosly....
THEN ENJOY!!!!!
by the way, a good side dish for this is some white rice and a good salad!!! Let me know it you like it or if you have questions! this is a very healthy dish!!!

How about a little thing called shephards pie....

1lb. of ground beef fryed and drained,
1 can of cream of mushroom soup
1 can of french style green beans
Cup of shredded cheese
enough potatoes to mashed

cook potatoes, mash them
mix the hamburger, cream of mushroom together. put in the bottom of a baking pan. Pour the green beans on top of it. And then spread the mashed potatoes on top. Sprinkle the shredded cheese on top of that. Bake until cheese is completley melted.

your family will love it!

Steak and Potato Stir-Fry

1 lb. boneless beef sirloin steak, cut into thin strips
1 Tbsp. oil
2 cups cubed potatoes
2 cups sliced carrots
1/2 cup water
2 cups each: sliced mushrooms and onions
1/4 cup KRAFT Balsamic Vinaigrette Dressing

COOK and stir meat in oil in skillet on high heat 2 min. or until browned. Remove from skillet; set aside.
ADD potatoes, carrots and water to skillet. Bring to boil; cover. Reduce heat to low; simmer 20 min. or until vegetables are tender.
STIR in mushrooms, onions, dressing and meat; cook and stir on high heat 5 min. or until heated through.
