2 TBsps butter
2 Tbsps Olive oil
1/2 tsp garlic
1/4 tsp salt & pepper
1/2 tsp basil
1/2 tsp parsley
juice of 1/2 lemon

heat butter and olive oil over low heat until butter melts. Remove from heat and add spices and lemon juice. Pour over any white fish fillet (talapia or orange roughy are my favs) and bake @ 425 until done depending on thickness (10-15 minutes).

Another good one is pesto and lemon juice. Cook as above

Braised Trout With Green Sauce

2 teaspoons butter
2 medium shallots -- peeled and sliced
2 branches fresh thyme
1/3 cup white wine
2/3 cups fish stock
4 trout -- boned and gutted
3 tablespoons cream
3 tablespoons green butter -- recipe follows
2 teaspoons lemon juice
finely chopped tomatoes and chervil -- for garnish
-- sprigs

Preheat oven to 400 degrees.

In a large deep skillet over medium heat melt butter. Add shallots and
thyme and cook without coloring for 4 to 5 minutes or until the onions are
tender. Add the wine and stock and bring to a simmer. Add the whole trout
and cover with foil. Place in oven
for 5 minutes turning the trout after 2 1/2 minutes.

Remove the trout from the pan, peel back the skin from the top fillet and
place on plate, keep warm.

Return cooking liquid to pan over high heat. Reduce until the pan is almost
dry and then add the cream and reduce until thick. Swirl in the green
butter off the direct flame, add lemon juice and season with salt and
pepper. Strain through a fine mess str
ainer and ladle over trout.

Garnish with chopped tomato and chevil sprigs.

Yield: 4 servings

Green Butter:

1/2 bunch flat leaf parsley 1 bunch scallions, green only 1/4 pound
unsalted butter 1 teaspoon fresh lemon juice

In a food processor combine all ingredients until smooth, set aside or
freeze for later use.

A simple recipe for trout prepared in the oven.
I just put a pat of butter inside, squeeze a lemon wedge over the trout, add salt and pepper and bake uncovered at 350 for about 20 minutes on a cookie sheet. The skin will slide right off when its done and when you open the trout, the skeleton can be removed in one piece.

I found a great recipe for baked haddock online on allrecipes.com. you take your haddock fillets, with a splash of olive oil, some julienned green and red peppers, thin slices of onion, a teaspoon of capers per fillet, and salt and pepper to taste. Wrap in individual aluminum foil packets and cook in a 350 degree oven for about 20 min or until fish flakes easily with a fork. I love this recipe and it's pretty healthy!

Spicy Cajun Grilled Shrimp, Fish, or Chicken

1/3 cup soy sauce or Kikoman Teriyaki Marinade
½ cup virgin olive oil
1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it
¼ cup sesame oil
¼ cup fresh lemon juice
2 tbs fresh ginger
2 tsp dry mustard
2 tsp tabasco
32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)
Bamboo skewers (1 for about 5 shrimp)

Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.

This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs.

Chop garlic, parsley and cilantro, add lemon juice, salt, spices {anything you like, I use ground cumin, paprika, pepper and ginger} and olive oil. Put the fish fillet on butter skin up, when it done, turn it over and put the mixture on it. Cook until the fish is ready. My husband is chef and this is my favorite fish recipe he makes.

Red snapper or halibut fillets
olive oil and melted butter
sliced kalamata olives
chopped roma tomatos
chopped cilantro
ground pepper
juice of one lime

Melt olive oil and butter. Spread on fish and top with pepper and olives, chopped tomatos and cilantro. Bake until fish flakes easily (depending on thickness of each filet) Sprinkle with lime juice

I prefer grilled mahi-mahi. Season it anyway you like and then grill it. Yummy! Lemon pepper and olive oil is what I use alot to season it. But you can do whatever you like. You could also make a packet out of aluminum foil and season the fish with salt, pepper, olive oil, and some sort of fresh herb like Thyme... close the packet and bake it or grill it.

I like my fish baked in an iron skillet, all white or catfish with lemon and butter and pepper. Easy simple and good

Marinade salmon steaks in teriyaki sauce over night. Broil for about 4 minutes on each side. Delicious!
