Sparring in Karate (considering this is the martial arts section).

something like K-1 or UFC/PRIDE.

look at some of the covers to PS or XBOX games to see how they are marketed, and you will see many ways to draw the event, even if you have no knowledge of it.

look at flyers for events.

think of key elements:
crowd and setting
athletes and mode of participation (ring, 1 vs 1)
prize

I think basketball or soccer would be a good event to use.
