listen i went food shoppin but forget to buy heavy cream -- i use it to make my mash potatoes fluffy n' light anyway can i substitute milk to do the same thing? if so how much? also do u know any other recipes to give my mash potatoes a kick? not too hard tho cuz i'm a new cook.....(about 4 month exper.)

Sour cream is wonderful in mashed potatoes, butter of course and yes you can use milk. Also garlic powder or chopped fresh garlic is good too. I know someone that uses ranch dressing in hers and thats good too. I dont know how much potatoes you are making (and I never measure) so I would say start out with maybe 1/2 cup of milk and whatever seasoning you want just add a little at a time like a 1/2 tsp garlic powder, or salt & pepper. Try 1/2 cup of sour cream. The best thing about making mashed potatoes is that you get to test them out over and over again until you get just the right amount and who could argue with that?? As far as butter maybe try 1/2 stick at first and then with everything adjust more according to your taste buds.

Milk is fine to use. Keep it simple. Add butter to the potatoes. Once you get them pretty mashed, then add milk and pepper. Don't put too much milk though or they'll turn out soupy. Just add a little at a time. Probably no more than an eighth of a cup for a small pot. Then just keep mashing until they're the way you like them. Some people like 'em sort of lumpy- some don't.

OK...mashed potatoes can be made with milk...and they taste A LOT better that way anyway...I'll give you my recipe for them and you can try it for yourself!
First (of course): boil your potatoes until the are soft (I like using the small yellow colored potatoes) and you can either keep the skin or peel it off (with these potatoes it doesn't matter because it isn't too hard).
Then: In your pot, put about a tablespoon of butter and begin to mash your potatoes....also begin adding milk (to your desired consistency!) then finally add some salt and pepper to taste! A kick to these mashed potatoes is adding some canned corn......It tastes very delicious and makes a great side dish!!! Enjoy! Let me know how it works out!!!!

First of all, Good For You to enter the cooking arena!!!! MAJOR CONGRATULATIONS!!! Yes, you can substitute milk for the heavy cream, just add about a half stick of butter in the whipping process......I gave you a star, as I see a rising star in your kitchen.....A kick for potatoes, I like to add roasted garlic........some cayenne pepper will also add an unexpected bang......try some Dijon style mustard.......you know that mustard goes into many potato salad recipes, so why not mashed potatoes??? The sky's the limit, and this new cooking thing that you seem to have gotten hooked on is a learning experience......I've had as many failures in the kitchen as I have successes, so DON'T GIVE UP!!!! It's all about putting your own signature touch on food.......Very proud of you, and so should your family be........

You can use milk, just add gradually until it's as fluffy as you like. Or you can just toss in some cream cheese and a bit of butter and garlic. Mine always turn out fluffy, I hate whipped potatoes that look like cafeteria mashed potatoes.

QUICK BACON GARLIC MASHED POTATOES

5 or 6 red potatoes
milk,
dash of garlic powder
butter
half jar of Real Bacon bits
salt and pepper

Peel potatoes and boil until soft, mash potatoes, add a little milk a dash of garlic salt, 2 to 4 tablespoons of butter. add a jar of real bacon bits salt and pepper to taste mix through.

LOADED MASHED POTATOES

8 large baking potatoes
1 bag shredded Colby cheese
1 jar sour cream
1 package of bacon
5 fresh green onions
8 tsp. butter

Wash potatoes to remove any dirt and/or pesticides. Wrap baking potatoes in aluminum foil and place onto a baking rack at least 1 inch apart. Bake on low for about 1 hour or until potatoes have a soft inside.
Remove aluminum foil and slice potatoes in half. Scoop out the inside of the potato into a large bowl and discard skins. Mash the potatoes in bowl with 8 tsp. butter. Place cheese, bacon, and chopped green onions into the bowl and mix.

Spray a casserole dish and with non-stick cooking oil and scoop the potatoes into the dish. Place extra cheese on top of the potatoes and heat at 350°F for 5 minutes or until cheese is melted. Eat and enjoy.

I have agreat easy recipe for mashed potato casserole.

Add sour cream instead of milk, 2 tsp. garlic powder, 1/4 cup finely chopped green onion, and 1 cup shredded cheddar cheese. You can serve it immediately or refrigerate overnight and bake it at 350 for 30 minutes the next day.

2 lb. peeled and diced potatoes
1/2 to 1 head garlic cloves, peeled and mashed
6 tbsp. butter
1/2 to 3/4 cup heavy cream, half&half or milk

Cover potatoes with water sufficient to cover in a heavy-bottomed pan. Cover and bring to a boil. Reduce heat slightly and simmer until potatoes are fork-tender.
Drain potatoes and set aside. Return empty pan to heat and add butter, leaving until butter melts. In a separate pan, bring cream or milk to boil (do not allow to curdle; remove from heat immediately when it starts to boil).

Mash the potatoes, beating in the butter and half&half, cream or milk, mashed garlic, and salt and pepper, until potatoes are smooth and fluffy.

NOTE: For milder garlic flavor, parboil garlic along with potatoes, then mash with potatoes.

ONLY FOR GARLIC MASHED POTATOES

You can use cream cheese(3 Tbsp.)instead of the heavy cream.Just use regular milk and the cream cheese.To give the spuds a kick put some diced green onions in them or bacon bits.Happy cooking.

There are so many good ideas here as to what to add to the potatoes already. But if FLUFF is what you want, after you mash the potatoes, you can whip them up with an electric mixer.
