Mandarin Orange Marmelade Cookies (a butter cookie wth Orange)
I copied this from a website at CHristmas and have made thme several times now.. kids love them!! really yummy with or without the chocolate..
Use canned mandarin oranges and orange marmalade for a rich orange-flavored butter cookie. White chocolate chips are an added touch of decadence, but you may omit them, if you wish.
INGREDIENTS:
2-3/4 cups all-purpose flour
1 teaspoon baking powder
3/4 cup (1-1/2 sticks) salted butter, at room temperature
1 cup sugar
1 large egg
1/2 cup orange marmalade
1 (8 ounces) can mandarin oranges, chopped and drained
1 cup white chocolate chips
Powdered sugar, optional
PREPARATION:
Preheat oven to 300 degrees F. Line cookie sheets with parchment paper or silpats.
Whisk together flour and baking powder in a medium bowl.
Set aside.
Place butter and sugar in a large mixing bowl and blend with an electric mixer on medium speed until the mixture appears grainy but well-mixed. Add egg and orange marmalade, beating until smooth. Reduce mixer speed to low and add flour mixture and mandarin oranges. Mix only until combined. Do not overmix. Fold in white chocolate chips. Chill mixture for 30 to 60 minutes to firm up.
Drop tablespoons of dough onto prepared cookie sheets, placing cookies 1-1/2 inches apart. Bake 15 to 18 minutes, until bottoms just begin to brown. Let rest on cookie sheets for 5 minutes before using a spatula to move them to racks. Cool to room temperature and dust with powdered sugar, if desired.
Yield: 3 to 4 dozen cookies

Not that I've seen, my hunch is that they are too juicy to add to cookies, if you notice most fruits that are added to cookie batters are rasins, dried cherries, dried apricots, dates, etc. are all dried, and had most of the moisture removed.......They might work in a cake-like recipe (where moisture isn't an issue in the baking process). If you're looking to flavor your cookies, use orange zest, orange juice for the liquid, and orange extract in place of the vanilla called for in a recipe.......Enjoy!!!

MANDARIN ORANGE SALAD
1/4 c. sliced almonds
1 tbsp. plus 1 tsp. sugar
Cook over low heat in pan, stirring constantly until sugar is melted and almonds are coated. Cook and break apart. Store at room temperature.
Tear 1/2 head lettuce into bite-size pieces, and place in large plastic bag. Add 2 medium stalks of celery, chopped, 2 green onions, thinly sliced, and 1 can mandarin orange slices, drained.
SWEET SOUR DRESSING:
1/4 c. oil
1/4 c. sugar
2 tbsp. vinegar
1 tbsp. snipped parsley
1/2 tsp. salt
Dash of pepper
Dash of Tabasco
Shake in tightly covered jar. Pour over greens in bag. Shake well. Add almonds just before serving. Even those who "don't like salad" will love this one!
MANDARIN ORANGE PINEAPPLE CAKE
1 pkg. Golden butter cake mix
1 (11 oz.) can mandarin oranges with juice
3/4 c. oil
4 eggs
FROSTING:
1 (13 1/2 oz.) Cool Whip
1 (3 oz.) pkg. vanilla instant pudding
1 (20 oz.) can crushed pineapple
Mix cake mix with mandarin orange with juice and oil. Add eggs one at a time and mix well. Grease and flour 3 (8 inch) cake pans. Divide batter evenly into 3 pans. Bake at 350 degrees for 20-25 minutes minutes. Cool thoroughly.
Mix Cool Whip, pudding and crushed pineapple with some juice. Return to refrigerator for 10 minutes. Frost cake and keep in refrigerator.
MANDARIN ORANGE CHEESECAKE
1 3/4 c. graham cracker crumbs
1 tbsp. sugar
1/2 tsp. cinnamon
1/2 c. melted butter
16 oz. cream cheese, softened
2 eggs
1/2 c. sugar
1 tsp. vanilla extract
2 c. sour cream
1/4 c. sugar
1 (10 oz.) can mandarin oranges
1/4 c. sugar
1 tbsp. cornstarch
Preheat oven to 350 degrees. Combine crumbs, 1 tablespoon sugar and cinnamon in bowl; mix well. Stir in melted butter until well mixed. Press onto bottom and side of greased 8 inch springform pan. Bake for 5 minutes. Combine cream cheese and eggs in mixer bowl, beat well. Add 1/2 cup sugar and vanilla; mix well. Spoon over crumb crust. Bake for 30 minutes longer. Combine sour cream and 1/4 cup sugar in bowl; mix well. Spread over cheesecake.
Bake for 15 to 20 minutes longer. Cake should be firm to touch and side should pull away from pan. Cool in pan for several minutes. Remove pan side. Drain mandarin oranges, reserving 1/3 cup orange juice. Combine reserved orange juice, 1/3 cup sugar and cornstarch in saucepan. Cook over medium heat until thick and clear, stirring constantly. Cool to room temperature. Decorate cooled cheesecake with mandarin oranges. Spread glaze over top. Chill for 6 hours. Yield: 8 to 10 servings.
MANDARIN CHICKEN
3 lbs. fryer chicken
Salt, pepper, paprika
1 1/2 tsp. oil
1/2 onion, diced
1/2 green pepper, diced
3/4 c. ketchup
3 tbsp. white vinegar
1 1/2 tbsp. brown sugar
1/4 tsp. salt
1 tbsp. cornstarch
1/2 c. mandarin oranges, drained
6 tbsp. syrup from mandarin oranges
Preheat oven to 350 degrees.
Rinse chicken, pat dry. Remove excess fat. Sprinkle with salt, pepper and paprika. Place skin side down in a 13"x9" baking dish. Bake, uncovered at 350 degrees for 15 minutes. Remove from oven and drain off liquid. Return chicken to oven, bake 15 minutes longer.
Meanwhile, in a medium saucepan, heat oil. Add onion and green pepper, saute until barely tender (about 3 minutes). Add ketchup, vinegar, brown sugar and salt. Blend cornstarch and mandarin orange syrup. Stir into sauce. Cook and stir until smooth and thickened, 3 to 5 minutes. Pour sauce over chicken. Bake 10 minutes longer. Add mandarin oranges. Bake 3 to 5 minutes longer, until oranges are heated through. Serves 4.
