This is an adaptation. The mountain plants have deep roots because surface or top layers of soil does'nt have water availability since the water flows down the slope and does'nt seep well in the soil. The deeper roots take water from the deeper depths of the soil.

Mountain plants are exposed to very adverse weather conditions ,strong extremely cold winds that would dehydrate any plant that had not got a deep root system and which blows away any surface soil, a mountain plants only defense against these conditions is to develop deep roots

If plants are located in mountainous conditions..then there tends to be less density of soil.
A plant requires several inches of soil to dig down into...base....root into.
A "mountainous" plant will then dig as deep as possible to maintain its root...its foundation...to survive....
It "knows" that there is not an abundance of soil.

Because they need to seek out water along scragly mountainsides, or else the roots grew in what was soil which eventualy weathered away and exposed the root.

I agree with the water thing, but it is worth noting that mosses and lichens have virtually no roots at all, and can survive very well on mountains.

Usually, they don't. Shallow soil and plentiful moisture mean they don't normally need deep roots.
