I know there's quote in the New Testament somewhere about how everyone is equally capable of being a Christian, anyone, be they slaves or masters, can seek salvation...I just can't remember where it is in the NT. Does anyone know what quote I'm talking about or a quote that expresses the same idea, that everyone can be a Christian?

You misquoted or misunderstood the message. God's message is not about being a Christian, as most people would have you believe. It is about entering the kingdom of God. I don't know the exact reference but I do know the verse. It says something like Who then is fit to enter the kingdom of God? Would my Father who is in heaven turn away a master? Surely then, he would also not turn also away the master's slave. (Of course there are many different translations of this verse.)
If by Christian, you mean "One who Seeks the path to the kingdom of God", which by the way is "at hand", meaning "at present." Then I think you understand this verse.
I believe God spoke of the Kingdom of God as being a place we find in our hearts on a daily basis. Of course some officials in the church will still to this day consider this heresy. But This is what they considered heresy in the Gnostic gospels when Christ spoke of the mysterious realm. He considered the external and the internal value of all things equal. This concept has often been dismissed by the church, and no wonder. They have a monopoly on the idea that Christ is an external figure head. Though some Christians are willing to accept Christ in their hearts, I fear that many are unwilling to understand that he was there to begin with; they were just denying it to themselves. But that is only my opinion.
The message is that God does not look for status when accepting people into his kingdom. God looks at the matters of the heart.

I know what you are saying, but I do not believe that there is a verse that means that everyone is capable of being saved.
The reason for my statement is that God says time and time again that he does not want everybody. Jesus spoke in parables in order that they do not understand.
Many are called, but few are chosen. None come save the Father draw him nigh. Paul wrote about certain people who would never understand. Are they capable of understanding? I don't think so. Because a measure of faith is given to every man. Some get that saving faith, and some do not.

The above answers are good. There is also this... (note: Greek really denotes "Gentile" in the context. So it means any race, whether Jew or non-Jew)
Romans 10:11-13
For the Scripture says, “Whoever believes on Him will not be put to shame.” For there is no distinction between Jew and Greek, for the same Lord over all is rich to all who call upon Him. For “whoever calls on the name of the LORD shall be saved.”
Salvation is available to all.

Amen as the brothers above quoted the book of life our beautiful truthful bible... one of the church's honorable saints once said that the believer does not follow the Christian doctrine because it is sweet but because it is true... I find our believes excelling in both!
