Fresh pasta is fantastic. No need to let it completely dry. Let them set. Place in boiling water, usually, when the pasta floats to the top, its done.
Only cook as many noodles at one time as you will be using. Leaving them in the broth will leave them gooey and sop up all of the broth. Enjoy!

2 cups all-purpose flour
3 egg yolks
1 teaspoon salt, small
1/4 cup water, (1/4 to 1/2 cup)
Put flour in mixing bowl. Add egg yolks and salt. Add water 2 tablespoons at a time until dough is stiff and easy to roll. Divide dough into 3 or 4 parts and roll 1 part at a time until it is the right thickness. You can cut the piece of rolled dough into 4 pieces and roll up and cut with a knife the width you want. After cut, put on a floured board and let dry for a while. After dried, they are ready to cook. Boil in chicken broth. Some of the dough may be frozen for later use. It takes about 20 minutes to cook a batch of noodles.

you don't need to dry your noodles, especially if they are going to a soup. But make sure they have been at room temperature for a few hours and don't leave them in the soup too long. they usually cook in about 3 minutes

Turn your soup of fand let them dry on their own. If you decide to oven-dry them, I would nto go as high as 250º; maybe 180ºF.....
You may also consider adding the cooked noodles to each serving individually. If you add them to your soup, they will swell and swell and eventually soak up all your liquid and be big, soft, blobs of yuk.

If you can, let them dry, but I have made noodles and shortly after put them into some beef and broth and they were still very good! Good Luck!

putting them in the oven will cook them more and make them crispy. And when you put them in the soup they will get wet anyways from the broth. Just drain them real good, maybe pat them with a napkin and throw them in the soup and enjoy.

they don't need to be completely dry, especially if you are putting them in soup. Don't use the oven it wont dry them evenly. You might get nasty crisp corners.

Noodles don't have to be dry to use if they're fresh made, they do need to rest and let the gluten setup
