chicken lasagna
1/2 cup chopped onion
1/2 cup diced green pepper
1/2 lb. sliced fresh mushrooms
Saute veggies in 1 T. olive oil and add:
1 can low fat cream of chicken soup
1/2 can (soup can that is) 1/2% milk
3 chicken breasts, cooked and cut up into bite size pieces
3 to 4 small zucchini sliced thin
2 cups low fat cheddar cheese
Mix together:
1 1/2 cups low-fat cottage cheese
1/2 cup Parmesan cheese
Put chicken pieces in bottom of oval or square oven dish. Salt and pepper. Sprinkle with garlic powder. Layer zuchini slices. Cover with cottage cheese mixture. Then put cheddar cheese on. Next add veggie sauce and cover. Bake at 350° for 45 minutes covered. Take off cover and cook another 20 to 30 minutes, until zucchini is cooked completely.

Any meat and vegetables, stir-fried. The carb is the rice you consume with it, so in case you in basic terms consume the pink meat and vegetables... low carb. Soups with meat and vegetables... comparable element. Spaghetti squash is straightforward to prepare dinner and you pull it aside into strands to make "pasta" and serve topped with marinara sauce... voila... low carb spaghetti Omelets with meat, cheese, vegetables... any style, in spite of the reality which you like...

I like lettuce tacos.
I make taco shells out of iceberg lettuce leaves (similar to the shells they use to serve plum sauce squab in Chinese restaurants).
*Iceberg Lettuce
*Cheese
*Tomatoes
*Sour Cream
*Ground Beef (or TVP for those vegetarians)
*Taco Seasoning (I use a recipe from Linda's Low Carb Website)
SEASONING FOR TACOS:
1 teaspoon chili powder
3/4 teaspoon paprika
3/4 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon salt
3/8 teaspoon garlic powder
Pinch cayenne
Combine and add to 1 pound browned and drained ground beef. Add a little water, if desired. This will be drier than taco meat made with a commercial mix due to the lack of thickeners. It tastes just as good as the store bought kind and is a lot cheaper to make.
Makes enough for 1 pound ground beef or 4-6 servings

GOURMET CHICKEN ENCHILADAS
4 large chicken breasts
1 large onion chopped finely
10 large flour tortillas (or use low carb wheat tortillas)
2 T butter
1 can rotel diced tomatoes
1/4 cup sliced jalapeneos
3 cups shredded Colby Jack cheese
1 8 oz. brick cream cheese softened
1 pint sour cream
2 T chopped cilantro
1 tsp Cavenders greek seasoning
1/2 tsp garlic powder
1/2 tsp chili powder
1 pkg cream of chicken Cup-o-Soup
Boil chicken in lightly salted water until tender. Dice and set aside.
In large saucepan, saute onions until tender. Stir in Rotel, diced chicken, 1 cup Colby Jack cheese, cream cheese, 1 cup of the sour cream, 1 T cilantro, Cavenders, and garlic powder.
Taste the mixture and add more seasonings, if needed.
Grease large casserole dish and preheat oven to 375 degrees.
Fill each tortilla with 1 cup chicken mixture and roll up. Lay filled tortillas into casserole with seams on the bottom.
In medium size mixing bowl, whisk together the other cup of sour cream, the dry Cup-o-Soup contents, chili powder, and 1 cup hot tap water until smooth and creamy.
Pour soup mixture over tortillas. Sprinkle with 2 cups Colby Jack cheese, and the other T of cilantro. Lay jalapenos on top if desired.
Bake uncovered for 30 minutes until cheese is melted and slightly browned. Allow to cool for 5 minutes before serving.

Spicy Cajun Grilled Shrimp, chicken, or fish
1/3 cup soy sauce or Kikoman Teriyaki Marinade
½ cup virgin olive oil
1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it
¼ cup sesame oil
¼ cup fresh lemon juice
2 tbs fresh ginger
2 tsp dry mustard
2 tsp tabasco
32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)
Bamboo skewers (1 for about 5 shrimp)
Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.
This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs

Chicken Ceasar Salad - I sprinkle Montreal Chicken seasoning (or any you like), use the ol' George Foreman grill for the chicken breasts, add some bacon and lettuce and dressing. That's it, and it makes for great leftovers.
