Introduce yourself to a local butcher and ask, Do Not Call on the phone, that's a slap in the face. If you look him eye to eye He will help you in grades and cuts and even tell you the best way to cook and season. Like most Chef's we liked to be needed and would do anything for someone that showed respect

Where in central Iowa? You could try looking up Triple T Meats in Ackley or Wellsburg. They have award-winning meats and a huge locker. I know the owners, they're very nice and can help you out.

I can even look them up for you if you email me. I guarantee they are top quality.
