When I am running late for work, these make the best breakfast.

INGREDIENTS
2 tablespoons butter, softened, divided
2 eggs
4 slices bread
2 teaspoons mayonnaise
2 slices American cheese
DIRECTIONS
In a small skillet, heat 1 tablespoon butter until melted. Break each egg into skillet; reduce heat to low. Cook until white is completely set and yolk begins to thicken but is not hard.
Meanwhile, toast bread. Spread remaining butter over one side of each slice of bread. Spread mayonnaise over buttered side of two bread slices; top with cheese slices, eggs and remaining bread.

Supa Dupa Eggsandwich (with a twist)

INGREDIENTS
1/4 pound extra lean ground beef
2 (1 ounce) slices bread
ketchup
mayonnaise
1 egg
2 slices mozzarella cheese
2 slices ham
1 slice fresh tomato
DIRECTIONS
Place a frying pan over medium heat. Form the ground beef into a patty and cook to desired doneness. Fry egg in a small, lightly oiled pan over medium heat. Flip the egg over and cover with cheese. Cook until the yolk has hardened and the cheese has melted.
Spread ketchup and mayonnaise onto the bread slices . Place the egg on one of the slices of bread. Heat the ham in the pan, and place on top of the egg. Top with hamburger and tomato slices. Place the other slice of bread on top, and slice in half.

Egg and Sausage Pockets

In a skillet, brown and crumble sausage until fully cooked. Meanwhile, cut pita breads in half crosswise; wrap in foil and warm in the oven. Drain fat from skillet; to sausage add onions, chili powder and eggs. Cook and stir gently over medium heat until eggs are set. Spoon into pita halves.

Over medium, with a broken yoke, so it doesn't run when you eat the sandwich.

Scrambled or a mini omelette can do the same thing, but I prefer the looks of the white egg on the sandwich.

over hard, crack the egg into the pan and break the yolk with your spatula, cook until the white part is no longer see through, flip, cook for about 2 mins, yolk should be cooked all of the way through, not runny.

Hard fry or scrambled would fit the sandwich better and make it easy to eat.
