Is a career in DSP (digital signal processing) interesting? And is it going to stay for a long time?

Sure most cell phones and just about anything that receives radio signals or works as a modem uses them. You could do application work where you use them in a system or you could do the transistor level circuit and chips designs. If you want to get into the application business, take classes that emphasize modulation and communication systems. If you want to design them, obviously circuit courses will help.
