Gruyere is a relatively firm cheese so you can freeze it.
The downside of freezing is that freezers tend to draw moisture out of foods so you risk changing the texture of the cheese to something that becomes crumbly and drier. That is fine if you plan to use it in cooking, but may put one off if you plan to use it on a cheese platter.

Unless you have way too much, refrigeration is the best way to go. If it gets moldy, you can cut off the mold and use what "clean" portions.

I do, especially before grating as it stays harder and is easier to grate.
I wouldn't freeze soft cheeses or double creams, but I have seen high end cheese shops in San Francisco that so that, so maybe it's OK...

Yes you can freeze it but it wont be quite as good to eat when it is defrosted. It will be fine for cooking with though.

You can - but you shouldn't....Freezing cheese will change the taste and, most importantly, the texture..it will be very grainy and unpleasant in your mouth....

Only if you want to use it for cooking. It gets crumbly. I don't like it.
