"Golden puffed pastries are filled with a feta cheese mixture. These can be made ahead, and popped into the oven after your guests arrive."

SERVINGS About scaling and conversions

INGREDIENTS
8 ounces feta cheese, crumbled
3 tablespoons finely chopped green onions
1 egg, beaten
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg yolk, beaten with 1 teaspoon water
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, blend feta cheese, green onions, and egg. Cut pastry into 12 (3 inch) squares. Place a mounded tablespoon of feta mixture in the center of each square. Moisten edges with water, and fold pastry over filling to form a triangle. Press edges together firmly with a fork to seal. Lightly brush pastries with the egg yolk mixture.
Bake for 20 minutes in the preheated oven, or until golden brown. Serve warm or at room temperature.

Sautee eggplant slices in olive oil, garlic and basil

I put it on a mixed green salad with balsamic vinaigrette. I've put them in a refried bean recipe. Or I've made this orzo salad. It's just a cup of orzo, boil that, then chop up some fresh spinach, green onion, maybe some sundried tomatoes, and toast some pinenuts. Then make a lemon vinaigrette with olive oil, lemon juice, zest, garlic, oregano, salt and pepper. Toss it all together with 4 oz. crumbled feta.

I could eat that for days.

crumble it on a salad, on pizza, top grilled chicken with feta, rosemary and lemon juice and put it under the broiler to melt the cheese . take a full block, put it in an oven safe dish, drizzle it with olive oil, salt pepper, capers, sun dried tomatoes bake in the oven for 20 mins at 350 serve with crackers.

SHRIMP AND FETA CHEESE ON VERMICELLI

8 oz. uncooked Vermicelli
1 lb. medium shrimp, peeled and deveined
Pinch of crushed red pepper flakes
1/4 c. olive oil, divided
2/3 c. (4 oz.) crumbled Feta cheese
1/2 tsp. crushed garlic
1 (14 1/2 oz.) can tomato wedges, undrained
1/4 c. dry white wine
3/4 tsp. dried whole basil
1/2 tsp. dried whole oregano
1/4 tsp. salt
1/4 tsp. pepper
Fresh basil (optional)

Cook vermicelli according to the package directions. Drain, set aside, and keep warm.
Saute shrimp and red pepper flakes in 2 tablespoons olive oil in a large skillet 1 to 2 minutes or until shrimp are slightly pink. Arrange shrimp in a 10 x 6 x 2 inch baking dish: sprinkle with Feta cheese and set aside.

Add remaining oil to skillet: saute garlic over low heat. Add tomatoes and juice: cook 1 minute. Stir in wine and next 4 ingredients: simmer, uncovered, 10 minutes. Spoon tomato mixture over shrimp. Bake, uncovered, at 400 degrees for 10 minutes. Serve over Vermicelli. Garnish with fresh basil, if desired. Yield: 3 to 4 servings.

TOMATOES AND FETA CHEESE

6 med. sized tomatoes
1 tbsp. fresh marjoram leaves, cut up or 1 tsp. dried
1 tsp. sugar
1/4 lb. Feta cheese, crumbled
1/4 c. olive or salad oil
3 tbsp. wine vinegar
1 tsp. salt
1/2 tsp. pepper

Cut tomatoes in wedges. Combine oil, marjoram, vinegar, salt, pepper, and sugar; stir well. Add tomatoes and mix gently. Cover and refrigerate 1 hour, stirring occasionally. Sprinkle with Feta cheese before serving. Makes 8 servings.

LINGUINE WITH BROCCOLI AND FETA CHEESE

1/2 lb. linguine
2 tbsp. olive oil
2 c. broccoli flowerettes, cut into sm. pieces
2 garlic cloves, crushed
1 tbsp. parsley, chopped
1 tbsp. basil, chopped
1/4 tsp. red pepper flakes
2/3 c. feta cheese, crumbled

Bring 1 quart of water to a boil in large pot. Add pasta; cook 8-10 minutes. Meanwhile, heat 1 tablespoon of olive oil in a large non-stick skillet. Add broccoli and garlic; saute for 3 minutes. Cover pan and saute for 2-3 minutes more; remove garlic. Mix in herbs and red pepper and set aside.
Drain pasta and add to the skillet with remaining oil. Add feta cheese; mix well and serve. Serves 4. 344 calories per serving.

CHICKEN WITH SPINACH AND FETA CHEESE

2 lbs. chicken breasts, pounded thin
10 oz. spinach, cooked in lemon and olive oil
8 oz. Feta cheese, crumbled
2 eggs, beaten
Seasoned bread crumbs
2 c. sliced mushrooms
1 tbsp. flour
1/2 c. dry white wine
2 c. chicken broth
Lemon juice to taste

Place spinach and Feta cheese on thin chicken breasts. Roll and secure with toothpicks. Dredge in eggs and seasoned bread crumbs. Brown in frying pan. Bake at 350 degrees for 30 minutes.
Gravy: Saute 2 cups mushrooms in butter. Add 1 tablespoon flour. Cook and mix well. Add 1/2 cup dry white wine, 2 cups chicken broth, and lemon. Cook for 3 minutes. Pour over heated chicken.

PASTA SALAD WITH FETA CHEESE

1/4 c. salad or olive oil
3 tbsp. lemon juice
2 tsp. snipped fresh oregano
1 tsp. snipped fresh rosemary
1/8 tsp. pepper
1 clove garlic, minced
8 oz. pasta spirals
12 radishes, sliced
1/2 c. sliced black olives
1/2 c. cubed cucumber
1 c. cubed tomato
1/4 c. chopped onion
1/2 c. sliced mushrooms
1 c. feta cheese
Lettuce or spinach leaves

In small bowl or jar with tight-fitting lid, combine oil, lemon juice, oregano, rosemary, pepper and garlic. Shake thoroughly and let stand. Meanwhile, cook pasta as package directs. Rinse with cold water and drain. Mix pasta with radishes, olives, cucumber, tomato, onion, mushrooms and cheese. Pour dressing over all and gently mix. Serve on lettuce or spinach leaves.
