She's about a medium size dog. Is there a bed big enough for her to burrow into or should I just buy a big bed and throw an old blanket over her?

I also had a dog who liked to sleep this way and purchasing a dog bed was not an answer for my dog, because he would always chew it up. I found that I could make a bed he enjoyed. It was really simple. Just take an old pillow case, fill it with cedar chips. Then just sew the one side together and on the other side use an old piece of material, sew it to the end of the bed let it lay over the bed and your dog can burrow under that material flap. The cedar chips help keep the bed bug free and it tends to smell better. I hope this helps.

a chair with a blanket in it would be the best thing or a dog bed with a blanket

My dogs like to do the same, I would get a big fluffy old comforter and lay it on the floor or on a chair, that way they can nest in it and get comfy

I would recommend an oversized bean bag chair. If she likes to burrrow that would give her room to do so and have 'walls' around her.
