INGREDIENTS
1/2 cup vegetable oil
1/3 cup chopped onion
5 cloves garlic, minced
1/2 cup all-purpose flour
4 teaspoons nutritional yeast
4 tablespoons light soy sauce
2 cups vegetable broth
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS
Heat oil in a medium saucepan over medium heat. Saute onion and garlic until soft and translucent, about 5 minutes. Stir in flour, nutritional yeast, and soy sauce to form a smooth paste. Gradually whisk in the broth. Season with sage, salt, and pepper. Bring to a boil. Reduce heat, and simmer, stirring constantly, for 8 to 10 minutes, or until thickened.

Gravy

Ingredients

vegetable stock
vegan worcestershire sauce
balsamic vinegar
cornflour or thickening granules

To make a vegetable gravy more tasty I always make it using water from boiled vegetables if I have any. Carrot water is especially nice as it has a nice sweet flavour. You need to strain off the vegetables and then boil the water down so that it reduces. Then you will have a more concentrated flavour.

If you don't have any vegetable stock made up you can make your own. Finely chop or grate 1 large onion, 1 carrot and a stick of celery. Put into a pan of boiling water (cover vegetables with water then add the same amount of water again. Boil until the vegetables are really soft and the gravy has reduced down considerably. Then strain the veggies. The left over vegetables can be blended and made into soup and the stock is ready to be made into gravy.

You can of course use a stock cube to make the gravy, or to intensify the flavour of yours, but they are very salty and sometimes the flavour can be too intense for a delicate dish.

Put your stock into a saucepan and add a dash of vegetarian Worcestershire sauce, and a dash of balsamic vinegar and some salt if required. Then add slowly some thickening granules or some cornflower until the gravy is of the desired thickness. Make sure you stir it quickly so it can mix well. If you have lumps in it, strain it through a teastrainer before serving.

How to make vegetarian gravy:
Gravy recipe for vegetarians. Can be used with Christmas vegetarian loaf.

Ingredients
2 onions
1 carrot
1 leek
1 turnip
1 stick of celery
2 tablespoons olive oil
2 pints water

Method
- Prepare the vegetables and cut into thick chunks.
- Fry briefly in the olive oil then add the water.
- Bring to the boil and simmer for about 3 hours.
- Skim surface to remove any scum.
- Strain.
- To make the gravy add a little corn flour (first mixed to a paste with a little cold water) and then season to taste.

Mom's Brown Gravy
"A nice rich brown gravy, completely vegetarian, and perfect for potatoes or vegetables."

INGREDIENTS
1 teaspoon yeast extract spread, e.g. Marmite/Vegemite
1 teaspoon onion powder
1 teaspoon salt
1 1/2 cups hot water
4 tablespoons butter
1/2 cup cold water
2 tablespoons cornstarch

DIRECTIONS
Melt butter in a saucepan over medium heat. Stir in yeast extract spread, onion powder, and salt until smooth. Gradually whisk in 1 1/2 cups water so no lumps form. Bring to a boil. In a small cup, stir together 1/2 cup cold water and cornstarch. Stir the cornstarch mixture into the saucepan, and continue boiling until thickened. Cool slightly before serving.

Vegetable Gravy
Ingredients :

4 potatoes
6 flowers of cauliflower
100 gms frozen peas
100 gms carrots

For gravy :

½ coconut, grated
2 tomatoes
Fresh ginger small piece
3 flakes of garlic
Cinnamon stick
4 cloves
1 tsp fennel seeds
1 tsp coriander seeds
1 tsp cumin seeds
Red chilli powder as per taste
1 tsp garam masala
Fresh Coriander

Method :

Boil water in a pan and add all the vegetables and cook the vegetables with little turmeric and salt.
Add all the ingredients for gravy and grind it in a mixer grinder.
Heat oil in a pan, cut 1 big onion into thin strips and add to the pan.
Fry the onions till golden brown.
Add the grinded gravy and let it cook for 10 minutes in medium heat.
Finally add the boiled vegetables and add fresh coriander leaves.

Buy some good quality vegetable stock cubes, crumble one into boiling water. Turn the heat down to simmer. Make a 'paste' of flour or cornflour and water (1 ½ tablespoons flour) add this to the stock stirring all the time until it thickens.

Vegetarian gravy: Using Vegetable broth (made using cut up veggies which you cook until mushy - remove veggies and you have the broth) you make a roux of olive oil and flour cooked over medium heat until brownish in color, slowly add the hot broth stirring continuously, add salt and pepper to taste, if not tasty enough add garlic salt, oregano or thyme. Enjoy!

Boil the vegetarian in hot water with some veg till the vegetarian is all mushy then sieve and serve. Note female vegetarians take longer to boil down.

I can't imagine that any of the ideas or suggestions would taste like much.

flour,oil and water? bleh

The whole idea of gravy comes from the drippings that meat gives off. Vegetables do not give off drippings.

Even when I make stock for soup and use water and veggies it doesn't taste like much until I add the chicken bones, skin and meat.

I would pour a can of vegetable stock in a sauce pan, heat it to simmer and stir in a little cornstarch mixed with water. Stir until thickened.
