ewwww...bean and rice...how about CHILI!!!!!!!!!! Or...a spicy chicken crunch wrap supreme from Taco Bell...I'm in love with those things...lol..FLAVOR FLAV!!!!!!!!!! =]

Ashley, I now live in Ca. the other day I made some red beans and rice and then ask my boss if she wanted some for lunch.I put the beans and rice in seperate containers, then gave it to her when she got ready to go home for lunch.She came back to work and ask me why had I put rice for her to take home,I said to put with the beans----Boy did she give me a look.But the Southern way was beans and rice, gravy and rice......Not here.

Sounds good with some corn bread...mmmmmmm...

RED BEANS & RICE

1/2 lb. sm. red beans
1/2 lb. ham hocks or smoked ham
1 yellow onion, chopped
3 stalks celery, chopped
1 tbsp. parsley, chopped
1/2 green pepper, chopped
2 cloves garlic, crushed
1/8 lb. butter
1 tbsp. Worcestershire sauce
1 can tomatoes, chopped (optional)
3 c. cooked rice
Salt, pepper & Tabasco to taste

Soak beans overnight. Drain. Add ham, onion, celery, parsley, bay leaves and garlic. Add water barely to cover contents. Bring to boil and then simmer, uncovered, for 2 hours being careful that beans do not stick or become dry. You may need to add water.
After 2 hours of cooking, add butter, pepper, Worcestershire, Tabasco, tomatoes to the pot. Continue cooking for 1 more hour, covered over very low heat. Do not add salt until this point. Serve over rice.


CORN BREAD

1 cup flour
1 cup corn meal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 cup milk
2 eggs
¼ cup shortening

In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt. Add the milk, eggs and shortening; beat for 1 minute. Pour into a greased 9-in. square-baking pan. Bake at 425 degrees F for 20-25 minutes or until bread is golden brown and tests done

We only eat beans and rice on Mondays down here in Louisiana...a tradition. However, i could break tradition and have some today..sounds good to me! Good ole southern red beans and rice with loads of jalapeno peppers on the side and some cornbread too.

I make mine with kelbasa to cook the rice in before adding the beans.......yummy!!!

Don't forget the cornbread :)

I'm making some pigeon pea (Arroz con Gandules) rice this weekend!!!! slurp! You're welcome to stop by 'cause my hubby won't eat it (he's too gringo!!!) he'd rather have a baked potato!!! haha! (all in love!)
