We make this a few times a year and it is great from cooking light
Lombo di Maiale Coi Porri (Pan-Roasted Pork Loin with Leeks)
4 large leeks (about 2 1/4 pounds)
1/2 cup water
1 tablespoon butter, divided
1/2 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 (2-pound) boneless pork loin, trimmed
1/2 cup dry white wine
Chopped fresh parsley (optional)
Remove roots and tough upper leaves from leeks. Cut each leek in half lengthwise. Cut each half crosswise into 1/2-inch-thick slices (you should have about 6 cups). Soak in cold water to loosen dirt; rinse and drain.
Heat the sliced leek, 1/2 cup water, 1 teaspoon butter, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large Dutch oven or deep saute pan over medium-high heat. Cook for 10 minutes or until the leek has wilted. Pour into a bowl.
Heat 2 teaspoons butter in pan over medium-high heat. Add pork; cook 5 minutes, browning on all sides. Add 1/4 teaspoon salt, 1/4 teaspoon pepper, and wine; cook 15 seconds, scraping pan to loosen browned bits. Return leek mixture to pan. Cover, reduce heat, and simmer 2 hours or until pork is tender. Remove pork from pan; increase heat to reduce leek sauce if it's too watery. Cut pork into 1/4-inch-thick slices. Serve with leek mixture; garnish with parsley, if desired.
Yield: 6 servings (serving size: about 3 ounces pork and about 2 1/2 tablespoons leek mixture)

You can use your cooked pork in place of the ham in this recipe, just cube it up
Muffaletta Pasta
recipe ingredients
1 cup hot water
1/2 cup sun-dried tomatoes, not oil packed
2 1/2 cups (8 0z) uncooked mostaccioli pasta
1 large red bell pepper, cut into 3/4 inch pieces
5 cloves garlic, minced
1 can (14 oz) quartered artichoke hearts, finely chopped and drained
1/2 pound cooked lowfat ham, cut into 3/4 inch cubes
1/4 cup stuffed green olives, chopped
2 Tbsp. capers
1 Tbsp. dry sherry or red wine vinegar
2 Tbsp. finely shredded smoked provolone or mozzarella cheese
recipe directions
Pour hot water over tomatoes and let stand 15 minutes; drain well and chop. Cook and drain pasta according to package directions. Spray a 12 inch nonstick skillet with cooking spray and heat over medium heat. Cook bell pepper and garlic in skillet for 3 minutes, stirring frequently until tender. Stir remaining ingredients (except cheeses) into skillet and cook 2 minutes or until heated. Serve over pasta and sprinkle with cheese.

PORK CHOPS DIJON (LOW CAL)
4 pork loin chops (about 1/2 inch thick)
1 med. onion, sliced
3 tbsp. Dijon style mustard
2 tbsp. low calorie Italian salad dressing
1/4 tsp. pepper
Trim excess fat from chops. Spray a 10 inch skillet with nonstick spray coating. Brown chops on both sides in hot skillet. Remove chops. Add onions; cook and stir over medium heat 3 minutes. Push onions aside; return chops to skillet. Combine mustard, dressing and pepper; spread over chops. Cover, cook over medium heat 15 minutes or until meat is tender. Serves 4.
SPICY MARINATED PORK CHOPS
1 c. vegetable juice cocktail
3 tbsp. finely chopped onion
3 tbsp. finely chopped green pepper
3 tbsp. lemon juice
2 tbsp. low-calorie Italian salad dressing mix
2 tbsp. Worcestershire sauce
Few drops bottled hot pepper sauce
4 pork loin chops, cut 1/2 inch thick and fat trimmed
For marinade: In plastic bag, combine all ingredients, except chops; add chops. Close bag securely; place in an 8 x 8 x 2 inch baking dish. Refrigerate 8 hours or overnight. Drain; reserve marinade. Place chops on unheated rack in broiler pan. Broil chops 3 to 4 inches from heat 6 minutes on each side or until done. Heat marinade and serve with chops. Makes 4 servings. One serving (1 chop and 1/4 cup marinade) equals: 3 lean meat exchanges; 1 1/2 vegetable exchanges; 1 1/2 fat exchanges.

i think you would love to try rachael ray's recipes. just go to
www.foodtv.com and look for 30 minute meals and search out pork recipes. all her recipes are low calorie, low carb, good carb, etc. and having a home cooked meal in 30 minutes or less.......well, how good is that?

Add some sauerkraut to the pork and make some pierogi's on the side. What a low point meal!!!!! I will have to make this myself very soon!

Try a pork stir fry.....yummy and very easy to make....stir fry the pork and vegggies, serve over rice. You can find easy stir fry packets at the grocery store.
