This mostly depends on how big the ship is. A bigger ship has several decks with shops in them.

A bakery specializing in 2 person desserts you can order with a bottle of champagne to be sent to your room for special celebrations. The liquor store which usually has some really great deals. The souvinir shops are divided into the cruiseline/cruise ship stuff (Carnival is big into Carnival merchandise) and the more traditional Caribbean gifts (liquor/perfume). A lot of people forget to bring something with long sleeves and the art auction, casino, and sometimes ports of call in the Bahamas or especially Bermuda are freezing and they sell out of thin sweatshirts/long sleeve tshirts.

The tshirts sold on the ship are of the ports of call and often just sold on the day you stopped there. They are of a much better quality than many you find in port. A jewelry, watches, leather goods store. The jewelry ranges too, from $20 items to $1000 items.

A cigar shop which will also sell cigarettes in case you forget them but depending on where you are from, they could be very expensive.

And don't forget the photography shop--that can sell you really really high priced underwater cameras (if you plan on doing anything underwater, bring all the water cameras you think you'll want from home) and the photographs they take of you every night. I love getting my picture done on formal night. It's so rare to see my husband in a tux.

The store that rents formal wear for those who forgot. They have a lot more tuxes than they have gowns too--apparently men are more forgetful.

The ships are getting more and more luxurious so almost everything you could think of wanting to buy is being sold on the ships.

On the cruise ship? Little gift shops: clothing, jewelry, perfume, liquor, souvenirs, and a shop in the spa that sells their products. There will also be art and wine auctions you can choose to attend.
