Yes - get some ready to roast veg from the supermarket and a few springs of rosemary. Bung these in the oven for an hour (in the meantime enjoy a glass or two of wine together!), then in the last 15 mins, fry up some fresh chicken breast in a saucepan, boil up some gnocchi (which takes literally 2 mins) and mix the veg, chicken and gnocchi in a pan with some red pesto sauce. Absolutely delicious!

How about fish parcels - cook a fairly firm fish in a tin foil parcel - add some wine, lemon and bay leaves along with bok choi and spring onions and cook for about 20-30 minutes... serve with brown rice or dry roasted potatoes. Scrummy and you can add whatever veg you want into the parcels. You could have a nice basil and mozzarella salad for a starter and perhaps fruit salad for desert if you want to keep everything healthy. Have a good evening!

Poached salmon with spinach
Use fresh spinach, couple cloves of garlic chopped, some butter and a 12 inch skillet with cover.
Heat to medium, add butter and garlic to pan, then fresh spinach leaves (about 20 ounces, it wilts down quickly, then put two salmon filets about 8 ounces each on top of the spinach and cover. The spinach will create water while wilting and this will steam the salmon nicely in about 5 minutes. Sprinkle with a bit of parmesian cheese and chopped fresh tomatos. Simple and really great.

You don’t need to exercise for hours on end. Short, sharp sets of exercise will produce better results when you work hard. Get a skipping rope, skip for two a few minutes, do push ups for a minute or so, skip for two minutes, rest for starters minute. Then change the push up to something else like sit ups and do the set again. Repeat it five times and it’s a simple, effective workout that will improve results than a long run or swim.

Both of these are lowfat and yummy! This is one of the tastiest dishes I have and you would never know it is lowfat. The parmesan cheese is the key, buy a good one.
Creamy Fettuccini Alfredo
1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)
In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.
Serving Suggestions:
I serve this with salad, and garlic bread.
Or
Quick Chicken Parmesan
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.
And a lowfat, awesome, easy desert to go with it, enjoy!
Hot Fudge Pudding Cake
During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.
1 cup Bisquick (lowfat version or regular)
1 cup sugar
3 tablspoons plus 1/3 cup of unsweetened cocoa powder
1/2 cup milk (lowfat or regular)
1 tp vanilla
1 2/3 cup hot water
Powdered sugar (optional)
Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.

Our favorite "Romantic Date Night" dinner is:
Scallops cooked up in some butter, wine & basil along with some garlic bread. If you need something else, we have also had shrimp cocktail. The Scallops cook in no time at all!
Have a great night!
