That occurrs when meat is not wrapped correctly prior to freezing or the meat has been in there for a long time......if it's frozen, it probably has freezer burn on it, which will darken it's color.........I'd defrost and crumble it into a hot saute pan, brown it off and it should smell like "cooking sausage" if not, down the drain with it....If it's still good, you might want to add it to like a quiche or casserole dish that requires long cooking and that will mask the freez burn.....Enjoy!!!!

A week and a half??? It's fine, go ahead and use it.....if it had been in there longer than 4 months, then I'd toss it.....

It got some air on it. Most meats do that. But if it has been frozen all this time, it should be fine.
Sniff inside the package. If it smells freezer burned, the taste might be off, but that's all. Often that problem can be overcome by rinsing the ice crystals off the meat before you defrost it.

It should still be good, but i believe when in doubt throw it out. The color change is caused from the lenght of time the sausage has been in the freezer.

Smell it & if it doesn't smell right, throw it out. If meat isn't properly wrapped prior to freezing, it can get freezer burn, & changes in taste & color. You really have to be careful where pork is concerned. I never freeze meat in the package it's in when I buy it. I remove it from the package & put it in a freezer bag.

It depends how long you had it in the freezer,,but if it looks kinda looks like a shriveled up mummy,then it's freezer burned,throw it away,but if it's just brown,try cooking it,usually the smell will tell your nose if it's good or not,good luck
