From the UK, when airlines don't seem to take bookings more then a 6 months to a year in advance.

So how do most people do this then? Get a one way to Oz then a one way back?

You can get a return ticket which is probably the cheapest thing to do. But you need to get one that will be open for 2 years, meaning you can stay for up to 2 years. Any travel agency will fix it up for you.

You can only book a year in advance. When you apply for your visa though Oz and NZ will ask how you plan on getting out of their country. You'll either have t show them a valid ticket out, can be to anywhere not just home. Or you have to show them that you have the funds to buy a ticket if you have arrived on a one way.

It's what I did. I was never asked to prove that I could leave there country. Hence I'm still in NZ just over a year later!!!

Most of these airlines us central reservations systems like Galileo or Amadeus, which only allow booking 336 days in advance.
Whats best to do is buy tickets with Qantas or Air NewZealand. You'll have to book a 'dummy' return date, but most of their cheaper tickets are changeable locally for a fee of around £50.
But most of there tickets are only valid for 1 year, if you're going for 15 months you might have to book 2 one ways

Unless rules have changed recently, you can only purchase return tickets to return within 12 months of outward departure. If you wish stay longer then you have to buy singles (or return if they are cheaper and just not use the return).

1 year is the max that you can have a return ticket for, so yeah, you'll have to get two one ways. It's what I did.
