Hi!!!
Here are some options:
1)Don’t throw out the vinegar when you finish a jar of your favourite pickled onions. Peel and thinly slice a couple of brown onions, pack them into the jar with the leftover vinegar, (top up with a little cider vinegar if necessary) shake jar and leave in the fridge for a couple of days before eating. Will keep for a week or so in the fridge.
NB Re-use vinegar only once.
(I’ve tried the same trick with sliced cucumber in leftover dill pickle juice – not as successful and doesn’t keep.)

2) It can also be serve with recipes like fish, chips, etc.

I've been know to do it too. In fact, during one drunken session with friends, we ran out of limes while doing tequila slammers. Pickled onion juice was the only thing we could find. As you can imagine, we were a bit worse for wear the next day. Urghh, the thought!!!!!

Poor it down the sink I'm afraid, i know it's wasteful but what else could you do with it after the onions are gone :-( Plus I quite like the jars to keep my pennies in...

If it's a pretty good juice,I usually put other vegetables in like carrots,okra,bell peppers,what ever your favorite veg.,put the lid on,put in your rerefrigerator,for about a week,make sure you put by the top part of your frigerator door,your veg that you put in will be sooooo good,after that throw it away,all the flavor will be gone,talking from experience,yup

Make "Dirty Martinis" with it........strain out the bits of onion pulp and get some gin or vodka and some dry vermouth and shake up a storm with some mates!!! You'll have a great time.......

hard boil some eggs & immerse them in it for about a month .......
lovely, also nice on chips, or sprinkled on crisps (not too much as they go soggy), also slice some cucumber thinly and lay out on a plate sprinkle with p o vinegar, leave for 10 mins, nice in salads & sandwiches, or with crisps, or simply on their own.
