Simply a question of diet for some, ex: insectivorous birds eat only insects, granivorous birds eat seeds (mainly), raptors go for prey. As for crows they are omnivorous, they'll eat pretty much anything they want. However salad is not the most energetic stuff, its better for them to go for the more meaty stuff or fruits. Crows will eat corn, peanuts (and other nuts), various fruits,grains on top of eating stuff they find dead or catch (mice, roadkill, amphibians, eggs, etc.)
Some birds around here will appreciate veggies, geese and some ducks are good example.
You shouldn't feed bread to birds it's not very good for them. It has low nutritional value and can cause malnutrition, it can get stuck in crops of birds (in their throat) and prevent the bird from eating, when it's stuck it can also get moldy... this can lead to the infection of the respiratory system.

They eat the food with the highest nutritional value and caloric intake. Meat is higher in calories than salad. In fact, for a bird, salad would not be a good choice as they will have to carry the weight of the food and not gain much nutritional value from it. They do, however eat corn and peas and berries. Vegetables with high calorie and fat content.
When your life depends on your ability to fly, you look at food much differently.

they are used to the bread and meat that you usually throw....rather feed them seeds and not veggies as some veggies have too much acids / gas that may kill them.
the most probable thing is the birds enjoy what you have been feeding hem all this while....so they don't know the new taste of veggies and don't like it...

as crows and other carnivorous birds have a specialized digestive tract that make the optimum usage from the protein content of meat and it`s byproducts and also they have ill developed intestinal cecaii though..they cannot digest vegetables properly at all...

crows are scavengers, they eat anything, esspecialy road kill. however, they will eat veggie too! i have had them in my feeders, mostly ground feeding, when the weather gets rough!
most northern birds won't eat leafy greens, i think it's a tropical/pet bird thing.
moms lovebirds love lettus, celery greens as a treat, our wildbirds do not...go figure!
we farm in sw mich, these are my observations!
