I have 5 people to cook for this saturday (dinner party). I need starter Ideas... 1 is a vegetarian. I'm so stuck, can't do anything with mushrooms as the vegetarian's main course is mushroom stroganoff, so I either need a dish we can all eat or something separate for her. Thanks people!!

How about a soup - roasted pepper or perhaps just vegetable... How about broccoli and stilton soup if the veggie eats cheese? Peppers stuffed with ratatouille with mozzarella on top and baked in the oven for 20-30 minutes.

okay I have done some just recently and they went down a storm!

take chunked up fresh canembert. carmelize some onion and then stir in frozen cranberries and cheese. Set aside.

Then take filo pastry and put a spoon of each in the middle of a sheet and wrap up the sheet to look like a spring roll and seal the edges with egg.

take some of the frozen cranberries and a little orange juice and a little sugar to taste as well as fresh mint and whizz in a hand blender.

Also make sure you have carmelized extra onion.

Shallow or deep fry the spring rolls.

On a plate, put a small mound of onion, then place two small spring rolls and pour a small amount of sauce over...a fresh sprig of mint to garnish and an elegant and very tasty starter!

I also did grilled Halloumi and aspargus spears placed neatly on a plate with a side dollop of sweet chili sauce.

I made a five scourse meal and these were my two starters and everyone loved them...a little sweet and a little savoury

Cheers

I tried out the following the other day and one of my friends is a vegeatarian and she really liked it

Asparagus with Lemon Butter Crumbs
Serves 4 as a starter

1¼ lb (570 g) fresh asparagus
finely grated zest 1 lemon
1 tablespoon lemon juice
2 oz (50 g) butter
1½ oz (60 g) fresh white breadcrumbs (about 2 slices bread, crusts removed)

salt and freshly milled black pepper
You will also need a steamer.

First wash the asparagus in cold water, then take each stalk in both hands and bend and snap off the woody end. Arrange the asparagus stalks in a steamer and steam over simmering water for 5-6 minutes, or until they feel tender when tested with a skewer, being careful not to overcook them. While the asparagus is cooking, heat 1 oz (25 g) of the butter in a frying pan. As soon as it is frothy, stir in the breadcrumbs and cook them, stirring constantly, until they're evenly browned and crispy. Then tip the crumbs on to a plate, stir in the lemon zest and season with salt and pepper.

Now put the pan back on to the heat and add the remaining butter. As soon as it is frothy, add the cooked asparagus and toss to coat them in the butter. Sprinkle with the lemon juice and season with salt and pepper. Divide the asparagus between warmed serving plates and sprinkle with the crumbs. Serve immediately.

a vegetarian starter that everyone will love is aubergine rolls.

thinly slice an aubergine, season and brush with olive oil then cook on a griddle.
make a filling by mixing feta cheese, red chilli, lemon zest & juice extra virgin olive oil and mint.
put some of the feta mix on the aubergine slice and roll.

you can make a tomato sauce to go with this too.

My own favourite starter which i always make....

Toast a few slices of baguette in the oven. Brush with olive oil and garlic. Top with slices of Goats cheese and grill until melted. Serve with red onion marmalade (Fry 1 large red onion until it starts to go brown and then add 2 tablespoons of brown sugar and allow to caramelise) on a bed of fresh baby spinach and cherry tomatoes. Drizzle lightly with balsamic vinegar before serving

make some mexican roll ups... so good vegetarian friendly

get about 8 flour tortillas, 2 pckgs cream cheese, chives, salsa (not to chunky) and shredded cheddar cheese

spread cream cheese on each tortilla then salsa chopped chives and cheese, put a good amount on everything but not too much or else it'll get messy when you roll them up

after everything is on roll them up tightly and wrap in tin foil

let it sit in the refridgerator for a few hours... take of the tin foil and cut the roll ups about 1/2 inch wide...

soo good and addicting!!! :)

How about a simple tomato and red pepper soup for starters? or prawn cocktail? Marie rose sauce is easy- mayo, ketchup and paprika, then just a lettuce leaf with the prawns, sauce and small chunks of tomato and cucumber.

Shredded carrot and raisin salad, ceasars salad as starter, feta and bulghur or couscous in a salad with tomatoes, scallions, red onions, olives in a viniagrette, green peppers, fresh mint, oregano, parsley. Or substitute it with grilled or pan fried haloumi.

You can do a vegetarian lasagna. Salads are always good. If the vegetarian eats fish, you can do crab cakes. If you want some good ideas/recipes, go to www.foodnetwork.com.
