Because of the acids in both the onion and the lemon reacting together.

maybe chemical reaction..
like..
citric acid(from lemon) reacts with sulfuric acid(from onion)..

I just tried and it did not happen. It continued to be in the original color. So the question and all other answers and explanation is a bit baffling :-O to me
