BAKED CAMEMBERT

1 round camembert, not too ripe, chilled
1 beaten egg
Bread crumbs
Deep frying oil

Divide cheese into quarters, coat with egg and then with bread crumbs. Fry the coated cheese pieces in the hot oil, until golden brown. The cheese should not run out.

CAMEMBERT TART

4 slices ham
3 tbsp. butter
8 sm. scallions, chopped
4 eggs, beaten
1 c. soft Camembert cheese
1/2 c. Parmesan cheese
Dash of nutmeg
2 c. whipping cream
Dash white pepper
1 baked 9 inch pastry shell

Cut ham into thin strips and saute in butter. Remove ham and saute the scallions until just wilted. Drain onions and combine with ham. Spread this mixture evenly over the bottom of the pastry shell. Spread Camembert cheese over ham mixture; sprinkle with Parmesan cheese. Beat eggs and cream, add nutmeg and pepper, and pour over the cheese. Bake at 325 degrees for 30 minutes until the custard is set. Serves 4.

Fried Camembert Cheese

Ingredients:
3 small
40g (1.5oz)
1
1 Tbsp
3 Tbsp
30g (1oz)
60g (2oz)
60g (2oz)
Camembert Cheese
plain flour
eggs
whipping cream
Bread Crumbs
margarine, unsalted
cranberry sauce
lettuce

Serves 3 - 512 cal per serving
Prep-time: 20 min. - Total-time: 20 min.
Carefully scrape off the white coating of the camembert cheese. Be careful not to damage the skin. This is important, otherwise the cheese will run out in the frying pan or deep fryer. If the white coating isn't removed the flour will not adhere to the cheese. First coat the camemberts with flour, then dip in the cream mixed with the beaten egg and finally coat with bread crumbs. Lightly press the crumb coating on the cheese. Carefully fry the camembert at a medium temperature for 2 to 3 minutes until golden. Turn the the camembert and fry for another 2 to 3 minutes. Serve the camembert on lettuce together with cranberries (or cranberry sauce). Baguette bread is an ideal accompaniment. You can also deep fry camembert at 160 to 170 degrees Celcius / 320 degrees Fahrenheit for approx. 5-7 minutes to achieve the same result.

Take camembert out of box and remove from paper ....... replace cheese in box ....... stud with pieces of garlic (if liked) and or red chillies (if liked) replace lid and pop in a moderate oven for 25 minutes in that time the cheese will be cooked through with a crust on the top .......... just right for dipping cooked new potatoes in or a chip of your choice.

Fantastic ..............

Enclose your Camembert in store-bought puff pastry, and bake according to directions.

Serve with a mixed salad, and a glass of white wine.

1/4 cup Unsalted butter
1/4 cup All purpose flour
1 cup Milk
9 ounces Chilled Brie or Camembert cheese, rind removed, cut into 1-inch chunks
1/4 cup Finely chopped fresh basil
2 large eggs
All purpose flour, for coating
2 cups Dry bread crumbs
2 tablespoons Olive oil
Directions:
Melt butter in heavy medium saucepan over medium heat. Add 1/4 cup flour and stir until light golden, about 2 minutes. Remove from heat. Gradually whisk in milk. Return pan to heat. Simmer gently until very thick but still pourable, about 4 minutes.
Add cheese and basil and stir until cheese melts, about 2 minutes. Remove from heat. Season with salt and pepper. Stir in 1 egg.
Pour into 10-inch diameter pie plate. Press plastic wrap onto surface of cheese mixture to prevent skin from forming. Chill overnight.
With floured hands, form cheese mixture into walnut-size balls. Dust cheese balls with flour. Chill until firm, about 1 hour.
Press each cheese ball into 3/4-inch-thick round. Place remaining egg in small bowl and beat to blend. Place crumbs in medium bowl. Dip cheese rounds into egg, then into crumbs, coating thoroughly.
Heat oil in heavy large skillet over medium-high heat. Working in batches, fry cheese rounds just until brown, about 1 minute per side; do not overcook. Drain on paper towels. Serve warm.
