it is down with a mold you pour melting chocolate into a mold let it harden then put in your caramel. then put your chocoalte on top of it to close it up. let set. then you pop them out. if you need the supplies or molds or anything let me know. i own a cake/candy supply shop. chef_ang@hotmail.com

they cast and cool the caramel to where it is solid, then cast the chocolate around it.

I might be wrong but I think they inject it, with a machine
