Ingredients
1 pint (600 ml) of milk
1½ oz (40 g) of plain flour
1½ oz (40 g) of butter
2 oz (55 g) of grated mature Cheddar cheese
1 oz (30 g) of finely grated Parmesan cheese
pinch of cayenne pepper
salt and pepper
Method
Melt the butter over a gentle heat in a medium sized saucepan.
Add the flour and mix together to form a smooth paste and cook for 1 or 2 minutes.
Very slowly, add the milk, a little at a time, whilst continuously whisking or stirring with a wooden spoon.
Continue to stir or whisk and cook over a medium - high heat until the sauce starts to thicken and then reduce the heat and simmer for about 5 minutes. Do not allow the sauce to boil.
Add the Cheddar and Parmesan cheeses and stir until the cheeses melt.
Add the cayenne pepper and then season with salt and freshly milled black pepper, cook gently for a few more minutes.
Stir well and then serve.

Three cheese sauce
Ingredients
2 cups of white or Béchamel sauce (see our recipe for quick Béchamel or white sauce)
¾ cup of grated Cheddar
½ cup of grated Gruyere cheese
¼ cup of grated Parmesan
1 tsp of dry mustard powder
1/3 tsp of paprika
¼ tsp of white pepper
¼ tsp of grated nutmeg
salt
Method
Heat up the two cups of white sauce in a medium sized saucepan.
Add each of the spices and seasonings whilst stirring continuously.
Stir in the Parmesan cheese, followed by the Gruyere and then the Cheddar.
Stir well and check that the cheeses have melted and blended into the sauce.
Check the taste and add any extra seasoning if necessary.
Serve as you wish.

Homemade Nacho Cheese Sauce:
13 min 5 min prep
4-6 servings
1 lb Velveeta Mexican cheese or regular Velveeta cheese, cut into cubes
3/4 cup heavy cream
2 tablespoons butter or margarine, melted
1/4 cup milk
1. Place all ingredients together in a microwave safe bowl. Microwave on 30% power or defrost power for approximately 8 minutes, stopping every two to three minutes to stir. Serve with nacho chips or use over vegetables.

Easy Homemade Tastin' Macaroni and Cheese

1 (14 ounce) box Mac n' Cheese Deluxe (Cheese sauce is premade)
3/4 cup milk
1 (8 ounce) container sour cream
3 cups shredded sharp cheddar cheese

1. Prepare macaroni according to package.
2. Drain.
3. No need to rinse.
4. Pour in large mixing bowl.
5. Add sauce packet, sour cream, milk, and 2 cups of the cheese.
6. Pour in casserole dish.
7. Top with remaining cheese.
8. Bake at 375F for about an hour or until nicely browned.

Why does it have to be home made. I buy the instant one that you just add boiling water to. When I'm doing cauliflower or broccoli I cook it and then grate a heap of cheese over it and then cover it with the instant cheese sauce. The heat of the sauce makes the cheese melt. Quicker and easier than making your own and the taste is great!!!

Cheddar Cheese Sauce
Use this cheese sauce on vegetables, pasta, or use in other dishes.
INGREDIENTS:
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon ground black or white pepper
1 1/2 cups milk
1 cup grated sharp Cheddar or smoky flavor Cheddar cheese
PREPARATION:
Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese.
Stir until smooth and well blended. Serve with pasta or vegetables.
Makes 2 cups.
