What are the exact reasons the army teaches you to disassemble and then reassemble a gun quickly?

To familiarize you with your weapon, yes,( a clean gun is a happy gun) but also to teach you attention to detail and discipline.
Attention to minor details can be the difference between living or dying for a soldier and you are constantly expected to do everything the way that everyone else does so that you can act as a single effiecient unit.
A soldier has to do what he is told and instantly comply without asking "why'. Being made to do a seemingly pointless task over and over is a good way of instilling that quality.

Wade a swamp all day... when you finally get to take a break.... in the rain, under a shelter half or poncho holding a light in your mouth... the skill set comes in handy

Firearms are obviously dangerous, they want you to know how they work and how to fix them if something should malfunction in a tight situation. It is a safety issue, it is not only military that does this, all law enforcement schools do the same thing.

Its not so much about speed as it is about accuracy. They want to be sure that you know how to tear it apart so it can be cleaned extensively. And when you put the weapon together again if you miss even the tiniest step your weapon will not fire.

Doing it fast just forces you to memorize the steps.

Because shells get jammed and dirt dust water any foreign substance could get in and prevent it from working properly.

Incase it breaks or get clogged with dirt in the field you will need to get it fixed in a hurry if your under fire.

Clean guns work well.. You want to be able to get back in the fight as soon as you can to help your friends stay alive...You do not want to die

Jamming or maintenance in the dark. We had to do it blindfolded in bootcamp.
