For my next car, i'm thinking of something that would get good fuel mileage. The Rabbit diesel gets like 54 or something...but i know diesels, at least in trucks, are normally very slow revving and hard to start in the cold. Are the VW diesels that way? Is the acceleration good? Can you just start it up in the morning and go w/ no warmup?

Unequivocally YES, buy one.
VW diesel engines have more torque than equivalent gas engines and the pickup is excellent. It will beat the gas rabbit off the line any day.
VW solved the glow plug problems over a decade ago. Now you just turn the key and crank like a gas engine. I recently started a new diesel vw at 25 F degrees below zero, and only had to wait 5 seconds for the glow plug light to go out.
As with all engines, I would highly recommend you wait a few minutes to let the engine idle when you initiate a cold start. That allows the oil to coat all parts before being stressed by driving. Its better in the long run, BUT if you must, you can go right away without worry.

Lots of questions to answer LOL. I had a diesel Rabbit years ago when I was younger (it was actually my first car, soon followed by an 85 GTI). I think the diesel was an 84 if I remember correctly. Back then it good gas mileage, but was VERY slow (it would only run about 65-70 mph downhill with a tailwind) and needed to be plugged in at night during the winter so it would start the next morning in Michigan. Also, the cost of diesel fuel has gone up substantially so there isn't much of a cost savings between that and regular fuel (at least where I live). One last point on the diesel itself, they definitely give off an "aroma" which either is or isn't an acquired taste. Personally I didn't care for it.
Again, that was back in the 80's, but I am guessing you are still going to face some of the same issues. You could get a turbo diesel which would help on the acceleration, but I don't think they are overly quick cars. With a diesel, I still think you need to let them warm up a bit in the morning when it's cold and they can be cranky to start at times.
If you are still open to options, I have a beautiful 2003 Jetta GLI six speed for sale (currently a third vehicle for us) that I'm almost giving away at this point. Curse the Michigan economy!

Slow reving is because it has a longer stroke than a gas engine. With a longer stroke, you have more pulling power (hence the semi's) also increases the life of the engine(I am just under 500,000).
Understanding how the diesel engine works(ignition of the fuel is only by compression)>no coil or plugs< and you understand why it needs to warm up some.
As all the diesels are now turboed acceleration is acceptable. If you are looking for something where you can spin the tires and race jap scrap from lite to lite, get a gas jobby.

if you are speaking of the brand new VW diesel, then yes, the are very good. drive like any other car, minimal turbo lag, quiet, well ballanced, of course it is still a diesel and have to treat it as such, but even the older 1.9l turbo diesel Volkswagen had in the MKIV were very nice and could be tuned to be fairly powerful and able. some 1.9l td jettas were raced and did respectibly.

But USA for now does not have any new rabbit diesel
I'm telling you one thing as soon they gonna come in I am going to buy one
These cars are the best ever
You are not going to have any problem TO START in the morning
And it warms up wery quik
With 1.9 TDI 100 hp and around 180 torque
more than 50 mpg i dont think is any doubt about that

Diesels have glowplugs so there is a little bit of warm up before you turn the car over. But really...it's a VW and a diesel...you really can't go wrong.

i think VW improved the new rabbit so i think as for "starting it up in the cold" that wont be too much of an issue.
diesels are really good on gas and i hear that the engione lasts longer b/c it burns cleaner, but i may be wrong.
