Ha! You picked the two Latin American countries that I love the most! And as I'm sure you know, there is no answer to that question beyond personal preferences. It's like asking which is better: American or Australian English?
Spanish is pretty much Spanish in standard written form. In spoken language, Mexicans are much easier for me to understand because I'm more accustomed to the accent, but that certainly doesn't make their spoken language better.
