cutting borads can be made from many materials. a study in the 70's showed plastic and other polyemers held up to 50% more bacteria than wood did, as wood has natural bacteria resistance. higend cutting boards are made from wood such as oak, beech, cherry, pecan and maple. crappy plastics are made from well, plastic.

I've seen them made out of several things--wood, glass and acrylic. The wooden ones aren't very sanitary because wood is porous and absorbs the moisture from raw meats. You can spray it off with a weak bleach solution after washing it, but that's too much trouble. Plus, wooden boards aren't dishwasher safe. They might be OK for a while, but after enough washings, the wood will warp.

Glass cutting boards aren't good for your knives. They'll dull them in no time flat.

I prefer acrylic. It's non-absorbent, won't dull knives, and can be sanitized in the dishwasher without damaging the board.

I have three; plastic, glass, and wood. They say the glass is best to prevent bacteria (easier to clean) but I like my old wood one best.
i don't know what kind of wood though, if that's what you meant.

depends on what you want to cut. Wooden ones are good for fruits and vegetables. You don't want to use them on poultry unless they are finished w/ a plastic cover because bacteria will grow in them. Use plastic ones for meat, fish and poultry, easy cleanup and wont harbor germs. You can buy disposable ones now. I like the ones that are flat and can fold for easy storage.
