The Scriptures, in stating, “In the beginning God created the heavens and the earth” (Ge 1:1), leave matters indefinite as to time. This use of the term “beginning” is therefore unassailable, regardless of the age scientists may seek to attach to the earthly globe and to the various planets and other heavenly bodies. The actual time of creation of the material heavens and earth may have been billions of years ago.
Further Creative Activities Involving Earth. Genesis chapter 1 through chapter 2, verse 3, after telling about the creation of the material heavens and earth (Ge 1:1, 2), provides an outline of further creative activities on the earth. Chapter 2 of Genesis, from verse 5 onward, is a parallel account that takes up at a point in the third “day,” after dry land appeared but before land plants were created. It supplies details not furnished in the broad outline found in Genesis chapter 1. The inspired Record tells of six creative periods called “days,” and of a seventh period or “seventh day” in which time God desisted from earthly creative works and proceeded to rest as found in Genesis 2:1-3: "Thus the heavens and the earth and all their army came to their completion. 2 And by the seventh day God came to the completion of his work that he had made, and he proceeded to rest on the seventh day from all his work that he had made. 3 And God proceeded to bless the seventh day and make it sacred, because on it he has been resting from all his work that God has created for the purpose of making."

I can explain man as a creation of God a whole lot easier than explaining man as decendant of the apes.
God created man with free will as as such allows man to either choose to be in His company and grace (Heaven) or not (Hell).
As for wouldn't creation still be happening, God creates according to His will not ours. Yes, I do think He is still creating things but not to the grand scheme of things as he did in the beginning.

God created it all. The universe is vast and we have no idea what's all out there. Personally I think there are other lifeforms out there. I can't fathom that God would create such a huge place and only put life on one planet. There could be other beings and/or planets with just plant and animals. Who knows. Maybe God creates a new galaxy when one dies out or a new sun when one dies out. Or maybe He had flooded other planets in order to start over. If we are the only planet with life on it, then so be it. That's God choice. But I'd like to know why He put so many planets out there and put life on only one. Maybe we are His blue print and after Jesus' 2nd coming, He will create more lifeforms at a later time here. Who knows for sure.

The Bible claims that man is not "finished" yet. Each individual has to exercise that "free will" in choosing whether or not to have faith. Thereafter the Bible says man will put on an incorruptible, sin-free, eternal body. It also says that there will be a new heaven and a new earth.

Free will was given to mankind since he was first created.
If you want to actually "see" miracles of creation that are newly happening, just take a look at the new galexies that are being 'born' every thousand few years.
Peace.

The universe is created new every seven days, yet one does not contradict the other. We are co-creators.
