Like all prophecies, there is a dual application to them, regardless of the prophet.
One application was for a local and soon fulfillment. The purpose for the dual aspect was so that the people would know the prophet was not a false prophet. And knowing the first part of teh prophecy was accurate, the people could count on the rest of the prophecy being fulfilled.
Plus, history tells us that the parts of his prophecies that have been fulfilled were indeed written prior to any portion being fulfilled. The evidence is included as the chronology of the Bible is revealed by which kings were in power at the time, and other historical events are mentioned. Additionally, other prophetic books will assure a correct time frame.

The originals of the Old Testament were all in the Alexandrian Library and then that dumba** Nero burned it down with some other property so there's no way to 'prove' any Old Testament stuff with originals.
I don't know enough of his prophecies to dispute him but Nostradamus made predictions that are still considered accurate, even though there are some very reasonable arguments against them. It seems, some people are prone to make 'prophesies', but history repeats itself and a well educated person can always refute any claim.

The Holy Scriptures were written by holy men of God as they were moved by the Holy Ghost (2 Pe.1:20-21, 2 Samuel 23:2, Eph.3:5 below).
2 Pe.1:20 Knowing this first, that no prophecy of the scripture is of any private interpretation.
2 Pe.1:21 For the prophecy came not in old time by the will of man: but holy men of God spake [as they were] moved by the Holy Ghost.
2 Samuel 23:2 The Spirit of the LORD spake by me (David), and his word [was] in my tongue.
Eph.3:5 Which in other ages was not made known unto the sons of men, as it is now revealed unto his holy apostles and prophets by the Spirit;

Ezekiel died in the Babylonian exile. That and some of them (most of them) haven't come true yet. Ezekiel predictied events that are to happen at the End of the World, it hasn't happened yet.
