Rules of BBQ:

Wood is better than Charcoal is better than Gas.
Indirect heat is better than Direct heat.

Different types of wood give different flavors. Smoking food with indirect heat gives the best flavor. The food absorbs the most smoke this way, and it shows up in the taste. The food is slowly warmed to perfection.

Direct cooking with wood yields great results also. The flavors aren't as potent, and the weight is on you to mix in some flavoring through marinating.

You can also use a smoking box. It's a small box you fill with wood chips and a little water. It is placed in a charcoal or gas grill to give some wood flavor to the meat.

Gas is great because of convenience. If you're short on time - gas is your friend. If you've got hours, consider cooking with smoke - it's the best.

I think the slow cooking time has some aspect to it, but it is the smoke from the wood that adds that lovely flavor. Same goes for charcoal.

The smoky flavor that the wood puts off as it burns. The flavor sinks into the food and gives it an extra taste.

depends greatly on the type of wood you use..but the smoke created gets into the food and the smoke the gas or electric heat is almost non-existent

when cooking with wood, your food will absorb some of the smoke coming off the wood, which will give it a distict taste....which personally i think is great!!

I think its because of the smoke. Smokey flavours just add that extra sumthin sumthin.
