There are several kinds of arthritis. The two most common ones are rheumatoid arthritis and osteoarthritis
Osteoarthritis is the most common form of arthritis. This is the form that usually comes with age and most often affects the fingers, knees, and hips. Sometimes osteoarthritis follows an injury to a joint. For example, a young man might hurt his knee badly playing football. Then, years after the knee has healed, he might get arthritis in his knee joint.
Rheumatoid arthritis happens when the body's own defense system doesn't work properly. It affects joints, bones, and organs--often the hands and feet. You may feel sick or tired, and you may have a fever.
Other conditions can also cause arthritis. Some include
Gout, in which crystals build up in the joints. It usually affects the big toe.
Lupus, in which the body's defense system can harm the joints, the heart, the skin, the kidneys, and other organs.
Viral hepatitis, in which an infection of the liver can cause arthritis.
Bottom line, INFLAMMATION....To protect yourself from suffering the pain, DO not EAT anything that causes inflammation, like starches. An anti-inflammatory diet will always help.

You just get it, regardless of how old you are (though it is more common in older people). I have it, for instance and it can be a nightmare. There are several types of arthritis, too long to detail here, but you can read about it here: http://www.arthritis.org/resources/gettingstarted/default.asp
Factors that may contribute to arthritis are age, weight, injuries, genetics, infections in some cases, etc.... an injury that does not heal well can give you arthritis, gout not properly treated can give you arthritis, the natural aging of your bones can lead to the disease too...
As I said, it is difficult to give an exact answer because of the many forms of arthritis involved as well as the different factors, but I tried :)
