I find it gives more flavor than the olive oil you buy for cooking

I cannot give you an a exact answer I never tried, but I know for fact that is not oil in the olive jar is brine. Also to make a great risotto, at the end of the cooking process, is used butter and cheese to incorporate, which will make creamy. Olive oil or other will make the risotto greasy, because will not incorporate. If you have a healthy conscious, then I suggest to use a good stock ( broth) of chicken, fish or vegetables, and at the end, do not use butter or oil, only a good Parmiggiano cheese or even little bit of mascarpone cheese. I am very shore that will taste good and at same time you do not fill guilty.

It is not all oil, lol. Empty the juice from a jar of olives into a saucepan. Cook on low heat for an hour uncovered... now use it in your risotto

If it's not rancid, and the olives are okay, then it should be fine. Probably have a very heavy olive flavor, though.
