Banana Cranberry Bread

INGREDIENTS
* 2 1/2 cups white sugar
* 1 cup shortening
* 3 eggs
* 3 mashed bananas
* 1 cup cranberry sauce
* 1/2 cup milk
* 1 teaspoon vanilla extract
* 4 cups all-purpose flour
* 1 1/2 teaspoons baking soda
* 1 1/2 teaspoons baking powder
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/2 cup chopped walnuts
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
2. In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
3. Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.

ok well first I have this dessert that is like a cranberry crisp kind of ...I dont know how to explain except that its amazingly delicious as well as easy to make...whenever I have to make a dessert but am short on time i always make this!
2 apples, peeled,cored and sliced
1 can cranberry sauce
1 cup oats
2 tablespoons margarine
1/3 cup brown sugar
Mix cranberries and apples and place on bottom of ovenproof dish (approximately 8x8).
Melt marg in microwave-safe bowl.
Add oats and brown sugar and mix well.
Pour on top of cran apple mixture.
Do not pat down.
Bake at 350 for 30-45 minutes.
Serve warm or cold.
and here is a yummy cranberry orange cookie
1/2 cup butter, softened
1 cup brown sugar
1 large egg
1 1/2 teaspoons finely grated orange zest
1 teaspoon baking powder
1/2 teaspoon ground allspice
1 cup white flour
2 cups rolled oats
1 cup cranberry sauce
Orange glaze
1 cup icing sugar
1 1/2 teaspoons grated orange zest
2 teaspoons orange juice
Preheat oven to 375°.
In a medium bowl cream butter, brown sugar, egg, peel, baking powder and allspice.
Blend in flour and stir in oats and cranberry sauce.
Drop batter from a teaspoon onto a lightly greased cookie sheet.
Bake for 10 minutes or until light brown.
Cool on racks and drizzle glaze over cookies.
Whip together glaze ingredients and drizzle from a spoon.

Sweet & Sour Meatballs
1 (16 oz) can sauerkraut
1 (8 oz.) jar spaghetti sauce
1 (16 oz.) can jellied cranberry sauce
½ cup packed brown sugar
3 lbs. meatballs
In a medium bowl, mix sauerkraut, cranberry sauce, brown sugar and spaghetti sauce. Place meatballs in slow cooker set to low. Cover with sauce. Cook 3-4 hours, stirring occasionally.

Cranberry Nut Bread
2 cups all-purpose flour
¾ cup granulated sugar
½ tsp. salt
1 ½ tsp. baking powder
½ tsp. baking soda
1 cup fresh cranberries, chopped (sometimes I add 1 ½ Cups)
½ cup pecans or walnuts, chopped
1 egg
2 TBSP. Canola or vegetable oil
¾ cup freshly squeezed orange juice
1 TBSP orange zest, minced
Preheat oven to 350 degrees. Grease a 9 x 5" loaf pan. Combine (whisk) the flour, sugar, salt, baking powder and baking soda. Add the cranberries and pecans and stir to coat with flour mixture. In a medium bowl, mix together the egg, oil, orange juice, and orange zest. Pour this egg mixture into the flour mixture and stir until just blended. Spoon the batter into the prepared pan. Bake for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes and then remove to a wire rack and cool completely.

1 (16 ounce) package frozen cranberries
2 cups water
2 cups sugar
1 cup crushed pineapple
2 stalks celery, chopped
1 small apple, peeled and chopped
1 1/2 oranges, peeled and sectioned
1 tablespoon orange zest
1 (3 ounce) package raspberry Jell-O gelatin
1 (3 ounce) package cherry Jell-O
1 cup pecan halves
1.Place 2 cups water in medium saucepan.
2.Bring to boil, add cranberries and cook for 5 minutes.
3.Add sugar and jello.
4.Cool for about 10 minutes and then add the remaining ingredients.
5.Chill overnight and serve.

Cranberry Upside Down Cake
Melt a stick and a half of butter, and use the wrappers to grease a 9” spring form pan. Now sprinkle a little flour over bottom of pan.
Wash two cups of cranberries, pat them dry, and pour them into the pan.
Sprinkle a half cup of sugar over those cranberries.
Measure out a 1/4 cup of pecans, and break them up with your fingers as you sprinkle them over too.
Bust 2 eggs over a medium sized bowl and beat well.
Add 1 cup of sugar
1 cup of flour
and the melted butter.
Scrape the batter out over the cranberries. Use a rubber spatula to distribute it equitably.
Bake in a 350º oven for 50 minutes or until the crust is golden.
