Ashley:
אשלי (with vowels: אֶשְׁלִי).
It is spelled: Aleph, Shin, Lamed, Yud

Jennifer:
ג'ניפר (with vowels: גֵ'נִיפֶר).
It is spelled: Gimel (with a Geresh), Nun, Yud, Peh, Resh

You are right- there is no "J" consonant in Hebrew, but we use an apostrophe (Geresh) to create letters that we don't have. For example:
'ג (Gimel)- j (as in "John")
'ז (Zayin)- zh (the "s" in "pleasure")
'צ (Tzadik)- ch (as in "chocolate")
'ת (Thav)- th (as in "thank")
'ד (Dalet)- th (as in "this")

Ryan:
1) Generally, the letter "Y", or diphthongs that end with "I", are represented by two Yuds [י]:
איימי [Amy]
מייקל [Michael]
קייטלין [Caitlin]

You can either write "Ryan" with two Yuds alone (and add a Kamatz, or a Patach for the avoidance of doubt), or you can add an Aleph [א] that indicates the long "ah" sound (ראיין).

2) An archaic writing of the diphthong "ah-y" is Aleph followed by Yud, as in the word/ name "Guy" ("valley"- גיא).
This form (ריאן), that resembles the original writing of "Ryan", is the preferable one to my opinion.

I don't think they do, as violet is quite a soft but older name, where as Eli sounds quite vicious and modern. Cathy does go better with Eli, and Anthony goes better with Violet. Sorry.
