After living in an orphanage for a year in a third world country, I can tell you that you can learn to eat just about anything. Those kids were not picky about their food, because it was all they had. I've sat through meals where 65 children sat in the same room happily eating giant chunks of boiled beets. I doubt I could get more than 1/10th of the American kids I work with now to eat like that!
Try sampling vegetables, and figure out if you like them raw or cooked. Then add a few more different varieties, work your way up to it. Try adding things like a little garlic salt, salad dressing, or butter to add a bit of flavor.

I like very few vegetables, but over time, I have learned to like them well enough. I got used to eating broccoli by putting melted cheese on top of it or dipping it in Ranch dressing. You can also do this with cauliflower and carrots. I have recently started stir-frying a mixture of vegetables like red & green peppers, yellow squash, zucchini & onions. Cut up a couple of cups worth and throw them in a pan coated with about a teaspoon of Extra Virgin Olive Oil and about a teaspoon of lite soy sauce. Within 5 minutes I have my veggies for the day!

I 'sneak' them in food for my kids.
In lazagne I use whole wheat noodles and thin slices of eggplant or zucchini.
I use chopped spinach in all my spaghetti sauce. It just looks like an herb sauce. You can also add baby food or pureed veggies into the sauce, you will NEVER notice.
Chopped broccoli and or cauliflower goes un-noticed in mac and cheese.
In baked Ziti I cut squash and zucchini into pieces just the same size as the ziti. With the sauce, noodles and cheese you can't tell.
