They shouldn't explode, but they may disappear - 'shrooms are fairly delicate critters and may not hold up to the pressure

No they will not explode but they may shrink to a size that may be hard to find in the cooker. (mostly made of of water and when that water is driven out by the cooker there is not much left)
collapsing is the correct word.
