Each one has its own appeal - Mexican food uses rice and beans, and veggies and cheese, and corn flour and hot sauces!
Chinese is good, many vegetable dishes, and tofu (for those who do not eat meat), and either rice or noodles. Japanese food also has rice, seaweed, fish, and noodles, but there is a noticeable difference between Japanese and Chinese food. Italian uses mostly pasta (many different kinds of noodles), tomato sauce or white sauce, seafood and meat, but less veggies. I can eat them all - but if I had to choose one as a staple I would choose Chinese.

p.s. You do not list Indian or Korean!

Which one is better and which one is not is all about preferences.Each of them has their characteristic. I prefer real Italian food because is not only about pasta or pizza, that Italy has to offer. The Mediterranean cuisine (healthy) is also considered Italian, which use lot of seafood, meats, vegetables, and rice.
Also Italy has regional cuisine, that offer lot of dishes unheard.

P.s For the person that applied that Italian food is all about pasta. My friend you know only American-Italian dishes From Macaroni & grill.
Do you know that in North Italy they have many rice field, also all kind of different type of rice, and 1000 and 1000 of rice recipe. Now you know that is not only chinese eats rice.

Out of these, I prefer Mexican the most. Second would be Italian. My all time favourite is Thai.
